There are few things in this world that are as delicious as well cooked brisket. If you know how to cook or smoke a mean slab of beef, then you pretty much hold the secrets to the universe in your hands, my friends. Now I have to admit that I have ruined plenty a good brisket in my day. The very first time I ever tried to cook brisket, it was in the oven and if you could have cut into the meat then you could have cut shoes out of it .. if you could actually penetrate the solid brick it had morphed into. The second time was just as horrible but that was a seasoning issue more than anything else but still equally as bad. At that point, I quit triple killing the cow and decided to live a quiet life devoid of all brisket.
It was a sad, lonely life spent watching others as they threw their BBQ beef culinary talents up in my face… small tears slowly falling down my non-BBQ covered cheeks….
Ok, maybe not THAT bad but if you ask me, people who can master cooking a tender, juicy brisket deserve a meat metal, in my opinion. True story!
I have learned over the years that when in doubt, embrace the healing properties of your slow cooker. It is the most magical wonderful appliance you own and you really can’t mess anything up if you throw it in a crock pot.
Of course, you also have to remember to plug in in. This is the key to amazing slow cooker food… electricity. I know I have mentioned it before but I just can’t mention it enough… PLUG IT IN!!!
All that being said it gets no easier than brisket in a crock pot it. The biggest decision you will face is seasonings. You can season your brisket a thousand different ways.. some like it spicy, some like it sweet and others still want it drowning in BBQ sauce. Now take a moment and consider a new invite to the party .. coffee. I can promise you that there is nothing yummier than bringing the two most perfect flavors together and slow cooking it for 9 hours. Coffee has such a strong, rich, robust flavor and it simply complements a beef brisket like no other flavor could. Add in that touch of heat and that sweetness and now you’ve got a party waiting to happen!
Slow Cooker Coffee Rubbed Brisket
You will need:
1 tablespoon ground coffee
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon brown sugar
1 tablespoon salt
1 tablespoon Creole seasoning
1 teaspoon smoked paprika
1 tbsp Chipotle powder
3 pound brisket, fat removed
1 cup day-old brewed coffee
1 tablespoon soy sauce
1 tablespoon liquid smoke
Start by removing any visible fat from your brisket. You could easily ask your butcher to remove it for you or if you are like me and like to get a little messy, you could simply remove the fat yourself. Once the fat has been removed, set aside your meat while you prepare the seasonings.
Combine all of your powdered seasonings, ground coffee and brown sugar in a small bowl and combine until well blended.
Rub the seasonings into your brisket, making sure that you have seasoned all sides and all areas of the meat. Place the brisket in your slow cooker and pour in on top of it your day old brewed coffee, soy sauce and liquid smoke. Swirl the liquid around to mix.
Plug in your slow cooker!
Set your slow cooker on low and go about your business. Walk away, go shopping, watch TV, paint your house, wrestle alligators, lay in the sun, take up day drinking. Whatever it is that you need to do for the next 9 hours, go ahead and do it!
After nine hours, remove your meat from the coffee broth. Shred your meat and discard the left over coffee broth, saving only about a half a cup to be mixed in with the shredded meat.
Sprinkle with extra salt to your taste. Return the shredded meat to the slow cooker and add in whatever barbecue sauce or other sauce you may want, at this time or no extra sauce at all, whatever you prefer. Let it sit for another 30 minutes and serve up on big, crusty rolls or next to whatever your favorite sides are.
Then go order up your official meat medal because you just mastered the fine art of brisket.
