Slow Cooker Pork Chops with Gravy

If I had to name an evil nemesis living in my kitchen, it would probably be pork chops. Looking for inedible shoe leather EVERY TIME??? Yup, that’s the relationship I have had with pork chops for as long as I have learned to cook and that is the reason why I would always walk right past them in the grocery store.  But my husband l-o-v-e-s pork chops so I knew I had to figure out a way to cook them without all of us break our teeth trying to eat them.  Then I learned a couple of tricks and now we have Slow Cooker Pork Chops with Gravy.

THIS is also Porkchop and he can be equally as difficult at times (#toddlerfromhell)… he likes to steal entire chocolate cakes off the kitchen counter and has even ran off with an entire smoked pork roast one time. Thanks to him, I have learned to barricade food like a pro 🙂

Back to food .. When it comes to cooking pork chops, like I said,  I usually over cook them and they are bone dry.  Then I swing the other way and in an attempt to not over cook them, they are too pink and scary. Then we swing back to the over cooked side.  Around and around and around, we go! Soaking pork in a brine definitely helps but sometimes you get home late from work or from picking up the kids and you don’t have time / energy / ambition to brine your chops for five minutes, let alone an hour. And contrary to popular belief, you CAN produce leather like pork chops in a slow cooker.

Trust. Me.

WHAT KIND OF PORK CHOPS ARE BEST FOR SLOW COOKING?

The best kind of pork chops for slow cooking are thick cut pork chops. Thick cut pork chops are usually about 2 inches thick.  They have plenty of meat of soak up that delicious cooking sauce and because they are not thin, they can withstand the longer cooking time.

WHY FRY THE PORK CHOPS BEFORE SLOW COOKING?

Braising is simply a cooking method that involves browning meat in oil, then cooking the meat in a tightly covered pan with liquid. The long, slow cook time helps develop a rich flavor and turns tougher cuts of meat fork-tender. Braising helps make Slow Cooker Pork Chops with Gravy super tender.

HOW DO YOU MAKE SLOW COOKER PORK CHOPS WITH GRAVY?

Easy! To make Slow Cooker Pork Chops with Gravy, rinse pork chops with water and pat dry. In a medium sized bowl, start by combining flour and spices for the pork chop dredge.
In a large skillet heat olive oil and butter over medium high heat. Dredge pork chops in flour mixture and when oil/butter is heated, sear pork chops for 2-3 minutes on each side.

Remove pork chops to the slow cooker. Lower heat to medium and add in the remaining dredge flour and whisk to combine. Pour in the chicken stock and bring to a low boil, whisk continuously. Add in the spices and cooking sherry and whisk to combine. Add onions over the pork chops and pour sauce into slow cooker and make sure that they are all covered. Cover and cook on Low for 8 hours or on High for 4 hours.

When time is done, remove pork chops from the sauce and strain off as much grease from the sauce as possible. Pour sauce into skillet on oven, heated to medium / medium high (I used a measuring cup to transfer the liquid instead of trying to lift mine slow cooker). Reserve one cup of sauce and add in the corn starch .. whisk to combine into a slurry.

Pour slurry into the skillet sauce and add cream .. whisk to combine. Bring to a low boil and check for seasoning. Add salt and pepper as needed. Ladle sauce over pork chops when serving and garnish with fresh parsley.

After so many failed attempts and much research, this Slow Cooker Pork Chops with Gravy recipe was born and came out so better than I could have ever hoped.  It may not be the healthiest way to eat pork but Slow Cooker Pork Chops with Gravy sure is the tastiest!!  The meat just falls apart and it’s smothered in an onion based gravy with garlic and cream and pepper, oh my!! Serve these Slow Cooker Pork Chops with Gravy over a heaping mound of mashed potatoes and you have the perfect picture of comfort food.

Ingredients

  • Pork Chop Dredge
  • 1/2 cup all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • Onion Gravy
  • 1 stick butter - divided
  • 2 tablespoons olive oil
  • 1 medium sized sweet onion sliced
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 teaspoons salt
  • 4 cups chicken stock
  • 1/2 cup cooking sherry
  • 3 pounds thick cut pork chops
  • 1/4 cup corn starch
  • 1/2 cup cream
  • fresh parsley (optional)

Instructions

  • Dredge pork chops in flour mixture and when oil/butter is heated, sear pork chops for 2-3 minutes on each side then remove pork chops to the slow cooker

    Ooo you may just convert me to a pork chop lover with this recipe! (And I love Porkchop – oh my is he a grumpy handsome boy!). I’ve never liked pork chops as I hate how dry and chewy they turn out but fork tender ones, smothered in a delicious sounding sauce? I’m in! Thanks for sharing 😀
