Oh my goodness, I have been waiting so long to post this recipe!!
When I started this blog, I really didn’t know what it had in store for me, the changes to my life it would bring. Late nights, lots of hours upstairs in my office working on my computer, endless site promoting… I have learned so much in the few short months Pack Momma has been alive (I like to think of her as her own leopard print wearing beast.. with sparkles) and I can’t even begin to think of how much more I have to learn before I can even consider myself a ‘beginner’. But one thing I knew was going to have to change was a whole lot of thinking outside the Box.
You know the Box, that cozy place of comfort that keeps you safe at night. The Box that holds the rules and regulations, the Do’s and Do Not’s, the I Only Like One Recognizable Thing On This Menu So That Is What I Am Going To Order. That Box. Well, my friends, Pack Momma has allowed me to slowly peek over the edge from inside the Box and has encouraged me to try new things that I never would have given a second thought to trying before.
Now, I’m not referring to tongue or brains or fried left-over spaghetti (yes, I DO put fried left-over spaghetti in that same column) but I am referring to the simple choices that so often get overlooked due to repetition and mindless habit. For example, when I go out to dinner and the waiter asks me ‘Soup or Salad?’, I always choose salad. Why? It’s safe, it’s comfortable, it’s fail proof. Soup? Soup can be scary… What if I don’t like it? .. What if the cook was having a bad day and it’s terrible? .. I’ve wasted my pre-meal choice and now it’s gone forever and the entire meal will have a black cloud over it due to poor planning and under-seasoned bisque. Seriously. Think about it.. I’m right, aren’t I?
Yup, true story.
All this being said, I’ve begun to recognize my lack of experimentation and have been trying to break myself out of my comfort zone. I’m trying new foods, new drinks, new appetizers. I recently said no to the salad and tried a seafood chowder instead. It wasn’t bad but it wasn’t life changing. It was, however, new. And that new experience is what inspired me to take the next step…. big, huge, gigantic step… to this post here because that lunchtime chowder was not amazing .. but you better believe this one is!
Spicy Corn Chowder with Shrimp
You will need:
3 cloves of garlic, minced
2 tbl butter
2 tbl butter
1 cup whole milk
2 cups chicken broth
1/4 cup dry white wine
1 cup red or yukon potatoes, cubed
4 slices of bacon, cooked and diced
1 1/2 cup corn kernels, frozen or canned or fresh or roasted
6 oz sharp cheddar cheese, off the block
1/2 cup heavy cream
4 green onion, chopped
1/4 tsp smoked paprika
1/4 tsp pepper
1/2 tsp onion powder
1/4 to 1/2 tsp salt, depending on taste
1/4 to 1/2 tsp chipotle powder, depending on taste
1/2 lb medium shrimp, peeled and deveined
Start by adding the butter to a large pot and melt over medium heat. Once melted, add your garlic to the butter and saute for one minute, stirring constantly so that it does not burn and then add in the flour and whisk together for another minute. Stir in your wine, broth, potatoes, milk, cheese, bacon, corn and seasonings.
Turn your heat up slightly and bring your pot to a low boil. Let simmer for 12-15 minutes. When your potatoes are fork tender but still firm, add in your shrimp, green onions, and heavy cream.
Simmer for another 5 minutes and check your spices. Serve with crusty bread for sopping up all that deliciousness!
There, that’s the Box for today. I have never had corn chowder before but honestly, what’s not to love? I had so much fun bringing this all together because it was new and scary (yes.. corn was scary!) and it came out beautiful and much better than my lunchtime sub-par, overpriced chowder.
