Keto Cheesy Jalapeno Chicken

Tender seasoned chicken seared up then simmered in a spicy jalapeno sauce and smothered in melted cheese is ready in just 30 minutes! The ultimate one pan low carb, keto meal, this cheesy jalapeno chicken is perfect to serve over zucchini noodles, cauliflower rice or just on it's own.

Ingredients

Chicken and Seasoning

  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper

Jalapeno Chicken

  • 2 tablespoons olive oil
  • 2 large chicken breasts, sliced lengthwise
  • 1 tablespoon butter
  • 1/2 large onion
  • 3-4 large jalapeno peppers seeds and stems removed, diced
  • 4 large garlic cloves minced
  • 4 ounces cream cheese
  • 1/2 cup heavy cream
  • 3/4 cup chicken stock
  • 1/3 cup Parmesan cheese grated
  • 4 ounces green chilies
  • 2 cups Pepper Jack cheese shredded, divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon smoked paprika

Instructions

  • Start by combining chicken seasoning spices in a small bowl and then sprinkle both sides of your sliced chicken breasts with the spice mixture.
  • Add olive oil to a large skillet and heat over medium high heat. Add chicken to the skillet and sear on each side for 3-4 minutes until nicely browned.  Remove from skillet and set aside.
  • In the same skillet, melt butter then add diced onion, jalapenos and minced garlic. Saute for 2-3 minutes, stirring occasionally.
  • Stir in the cream cheese and once melted, whisk in the heavy cream, chicken broth, Parmesan cheese, green chilies and sauce spices. Bring to a low boil and add in 1/2 of the Pepper Jack cheese to the sauce.  Stir to combine.
  • Once cheese is melted, add the chicken back to the skillet, cover with the remaining cheese. Reduce heat to Low, cover and simmer for 8-10 minutes.
    Serve immediately.

Notes

PRO TIPS FOR PERFECT ONE PAN KETO CHICKEN

  • Not a fan of spicy food? Start with 1-2 jalapeno peppers or leave them out completely and only add the 4 ounce can of green chilies. Great flavor, less heat.
  • Personally, I am a fan of chicken stock but feel free to use chicken broth or even water in this recipe.
  • Parmesan cheese may seem out of place in this recipe but I like the sharp flavor it brings and it helps thicken up the sauce a bit too.
  • Feel free to make this jalapeno chicken dish with other cuts of chicken, like bone in chicken thighs. Remember to adjust the cook time and use a meat thermometer to make sure the chicken is cooked (165 degrees F for poultry).
