Cajun Chicken Alfredo Pasta

Ingredients

  • 2 tablespoons olive oil
  • 2 1 /2 tablespoons Cajun / Creole seasoning divided
  • 2 large chicken breasts
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cup whole milk
  • 1 1/2 cup chicken stock
  • 1/2 teaspoon salt
  • 1 tablespoon red pepper flakes
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 4 ounces sun-dried tomatoes in oil diced
  • 1/4 cup sour cream
  • 1/3 cup fresh basil diced
  • 1/2 cup Parmesan cheese grated
  • 6 scallions chopped
  • 1 pound rotini pasta

Instructions

  • Start by cutting up your chicken breasts into bite sized pieces and moving them to a large zip top bag.  Add in 2 tablespoons of Cajun or Creole seasoning, seal the bag and toss to coat the chicken pieces in the seasoning.  
  • Start making your pasta by bringing a large pot of salted water to boil and add in your pasta. Cook according to package instructions. Drain and set pasta aside. 
  • While your pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium high heat. Add in the chicken pieces and cook through until no longer pink, about 5 - 7 minutes. Remove the chicken pieces and set aside. 
  • Add butter to the skillet and once melted whisk in the flour. Add chicken stock, milk, red pepper flakes and seasonings and bring to a low boil. Add in diced sun dried tomatoes, basil, green onions, sour cream and Parmesan cheese and stir to combine. Add in the chicken, remaining Cajun seasoning and pasta and mix until everything has been incorporated. Garnish Cajun Chicken Alfredo Pasta with more basil. Serve immediately.
