Ingredients

  • 1 large baguette of French bread sliced 1/2 inch thick
  • 4 ounces spreadable goat cheese room temperature for easy spreading
  • 1 pint cherry tomatoes quartered
  • 2 or 3 cloves garlic minced
  • 8-10 basil leaves stacked, rolled and thinly sliced
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon pepper
  • 1 ounce balsamic glaze

Instructions

  • Prep & Preheat - Preheat oven to 400 degrees and line baking sheet with parchment paper. Move oven rack to top slot.
  • Tomato topping - In a medium bowl, mix chopped cherry tomatoes, sliced basil, olive oil, minced garlic and salt/pepper. Set aside.
  • Slice - Slice baguette on the bias into 1/2 inch discs and place on baking sheet. 
  • Toast - Toast your bread on the top rack for 5-6 minutes or until edges of bread are lightly browned. Remove from oven and transfer bread sliced to a serving plate / platter and let cool until you can easily handle them.
  • Top & Drizzle - Once cool, lightly brush one side of bread with olive oil. Spread a dollop of goat cheese on the bread, followed a spoonful of the tomato topping mixture. Drizzle with balsamic glaze and serve immediately.

Pro Tips for Perfect Tomato Bruschetta

  • Olive oil - The olive oil on the bread slices will act like a bit of a barrier to help your tomato bruschetta bites from getting too soggy from the goat cheese and tomato mixture.
  • Salt - Tomatoes love salt so be sure to taste your cherry tomato mixture before adding it to your baguette slices. You may need more salt than you think.
  • Sliced tomatoes - If you are making this goat cheese bruschetta recipe just for yourself, feel free to just slice your cherry tomatoes in half and add them to your bread slices, if that is easier than mixing all of the ingredients together.
  • Serving - If serving this tomato basil bruschetta recipe at a party, consider serving the bread plain with the goat cheese and tomato topping to the side. Let your guests top their own baguette slices with the cheese and tomato mixture. This will keep the bruschetta fresh.
  • Balsamic Glaze - Balsamic glaze can often be found in the salad dressing aisle of your grocery store or near the vinegar section. 
  • How to slice basil - To easily slice your basil leaves, stack the basil leaves on top of each other and then roll them up tightly, like a cigar. Then slice them thin from one end of the basil roll to the other.
