12small flour tortillas
Pineapple Salsa
2cupsfresh pineapplechopped
2jalapenoseeded, ribbed, diced
1/2cupcilantrodiced
1/3cupred oniondiced
1/4teaspooncumin
1limejuiced
salt and pepper to taste
Instructions
Start by adding charcoal and lighter fluid to your grill and heating until charcoal is ashy and white. Then brush the grill with vegetable oil and remove the Smithfield Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin from its packaging and place in the center of grate. Discard bag with marinade. Cover and cook for 15 to 20 minutes, turning every 1 1/2 to 2 minutes, until the tenderloin reaches an internal temperature of 140 degrees F.
While the pork is grilling, chop your fresh pineapple into bite size pieces and add to a medium sized mixing bowl. Add in diced jalapenos, cilantro, chopped red onion, cumin and salt and pepper to taste. Finish off by add lime juice and stir to combine.
Once pork is done cooking, transfer to a plate and cover with tin foil to rest. After 10 minutes, cut pork medallions and add to the small tortilla wraps. Top with pineapple salsa and an extra squeeze of lime. Enjoy!!
