Ingredients

  • 3 cups old fashioned oats
  • 1/3 cup brown sugar
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/3 cup maple syrup
  • 2 cups 2% milk or any milk you prefer
  • 1 tablespoon vanilla extract
  • 4 tablespoons butter melted
  • 2 cups blueberries
  • 1 1/2 cups pecans chopped and divided

Instructions

  • To make your Blueberry Pecan Baked Oatmeal, start by preheating oven to 350 degrees and lightly butter a 9 x 13 baking pan. Mix old fashioned oats, brown sugar, baking powder, cinnamon, salt and 3/4 of the chopped pecans in a large mixing bowl. In a separate bowl, combine eggs, vanilla, melted butter, syrup and milk. 
  • Pour half of your oat mixture into the baking pan, smoothing to make an even layer and then add a layer on top of half of your blueberries. Pour on and even out the remaining oat mixture. Evenly pour your egg / milk mixture over the entire pan of oats, lightly pressing the oats down to make sure they are all covered in the milk. Sprinkle on the remaining blueberries and reserved pecans. 
  • Bake for 40 - 45 minutes or until the top is golden brown. Remove and let set for 10 - 15 minutes before serving. Leftovers can be stored in the refrigerator for 3 - 4 days and can be reheated in the microwave for 30 - 60 seconds.

PRO TIPS FOR PERFECT BLUEBERRY PECAN BAKED OATMEAL

  • To make this breakfast casserole ahead of time, bake it and let it completely cool before storing it covered in the refrigerator. To heat up, microwave for 30-60 seconds or cover and bake at 375 degrees for 10-15 minutes.
  • Don't over bake the baked oatmeal.  You want this to be creamy, crunchy and soft.
