Roasted Radishes

Roasted Radishes are a delicious alternative to potatoes if you are following a low-carb or keto diet. Made with bacon, green onions and feta cheese, these pan roasted sauteed radishes will be a favorite among your keto side dishes!

Ingredients

  • 2 - 3 tablespoons olive oil
  • 1 pound radishes cut into bite sized pieces
  • 5 ounce pre-cooked bacon pieces
  • 6 green onions .. diced
  • 1/2 teaspoon salt .. or seasoned salt
  • 1/2 teaspoon black pepper
  • 4 ounces crumbled feta cheese

Instructions

  • To make your Roasted Radishes, start by washing and trimming the ends of your radishes and cutting them in half. 
  • Add olive oil to a large skillet and heat over medium-high heat. Add the radishes, stir to coat and sprinkle with salt and pepper or seasoning salt. Cover skillet and cook covered for approximately 15 minutes, shaking skillet often redistribute the radishes in the pan. After 15 minutes, remove the lid and reduce heat to medium. 
  • Stir in pre-cooked bacon pieces and diced green onions. Continue to cook for another 2-3 minutes, stirring often. Radishes should be fork tender. Add in crumbled feta cheese and stir to combine. Remove from heat and serve immediately.

Notes

  • I have found that purchasing your radishes from a local farmers market usually gifts you with larger radishes.  The radishes often time found in the supermarkets are substantially smaller in size.
  • Be sure to allow your radishes to cook all the way to fork tender.  The longer they cook, the more their 'radish taste' mellows out and the more they compare to potatoes.
  • Keep in mind... these Roasted Radishes are NOT potatoes.  If you go into this dish expecting miracles, you won't be disappointed but even a modern miracle of the highest degree won't change a radish into a red potato :)
  • I use the pre-cooked bacon piece packets found in the salad dressing aisle of my supermarket. They take the work and mess out of adding bacon to a recipe. However, feel free to use 6 slices of cooked bacon if you would like to substitute.
