Ingredients

Whoopie Pie Cookies

  • 1 box white cake mix
  • 3 ounce instant vanilla pudding
  • 8 tablespoons butter, room temperature
  • 2 eggs, room temperature
  • Red and Blue gel food coloring

Whoopie Pie Filling

  • 2 egg whites, beaten until frothy
  • 4 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 1 cup shortening
  • 4 tablespoons milk or heavy cream
  • 1/2 cup butter, softened

Instructions

To Make Whoopie Pie Cookies

  • Preheat your oven to 350 degrees and spray a cookie sheet with non-stick spray or line with parchment paper.
  • Combine cake mix, pudding, butter and eggs
  • When you have your ingredients combined, split the batter evenly into two separate bowls.
  • Add in several drops of red food coloring into one bowl and the blue into the other. Mix the food coloring in so that you have one bowl of red batter and one bowl of blue.
  • Drop a spoonful of the batter into your hand and roll it into a 1 inch ball and set on your cookie sheet. You can also drop the dough directly onto the cookie sheet and shape it into a round ball shape with your fingers.
  • Cook cookies for 10 minutes.
  • Remove them from the oven, let them cool for one minute and then move them to a cooling rack.

To Make Whoopie Pie Filling

  • In a large bowl, add egg whites and using an electric mixer, beat for 1 to 2 minutes or until frothy.
  • Add sifted powdered sugar, vanilla extract, butter and milk and beat until light and fluffy.
  • Once completely cooled, spoon frosting onto the back of one cookie and then top it off back to back with a cookie of the opposite color, making a sandwich.
  • Repeat with the rest of the cookies. Store in an airtight container and keep refrigerated until ready to serve.
