Cheesy Chicken Noodle Casserole is the perfect classic combination of cheesy pasta, seasoned chicken and a Ritz cracker topping. Made from scratch, this old school chicken and egg noodle casserole is an easy weeknight dinner your family will love.
1 teaspoon eachsmoked paprika, onion powder, garlic powder, salt
1/2teaspoonpepper
1tablespoonDijon mustard
3cupsmilk
2 1/2cupschicken broth
12ouncesegg noodles
8ouncessharp cheddar cheese, shredded or crumbled
2-3cupscooked chicken, shredded
1/2cup parmesan cheese, grated or shredded
1/2cupsour cream
1 cupfrozen peas
8-10Ritz butter crackers, crushed
2green onions, chopped for garnishing
Instructions
Preheat oven to 350 degrees.In a large oven safe skillet, add 3 tablespoons of butter to a large skillet and heat over medium high heat until melted.Add your diced onion and cook for 2-3 minutes, stirring frequently before stirring in minced garlic. Cook for another minutes or until the garlic becomes fragrant. Sprinkle in flour and whisk to combine. Continue to whisk together and cook for about a minute to cook off the raw taste of the flour.
Whisk in milk, chicken broth, seasonings and Dijon mustard. Bring to a low boil and stir in the egg noodles. Reduce heat to medium low, cover skillet and simmer for as long as the noodle instruction say to cook pasta. Halfway through the cook time, remove lid and stir noodles, recover and continue cooking until noodles are al dente.
Once your noodles are perfectly cooked, add in the sharp cheddar (shredded or crumbled), parmesan cheese, peas and shredded chicken. Stir to combine and then add in the sour cream and stir again. Check your seasonings to taste. Transfer to a 9x13 baking dish if your skillet is not oven safe.
Melt 2 tablespoons butter in a microwave safe bowl and add to that crushed Ritz crackers. Mix to combine and sprinkle over your skillet or baking pan. Bake for 15-20 minutes or until your topping is golden brown and crunchy.Garnish with chopped green onions (optional), serve immediately and enjoy!
