Ingredients

  • 1 large baguette of French bread sliced 1/2 inch thick
  • 4 Roma tomatoes, diced
  • 4 ounces spreadable goat cheese room temperature for easy spreading
  • 2 or 3 cloves garlic minced
  • 1/3 cup basil leaves - approximately 8 to 10 leaves stacked, rolled and thinly sliced or ripped
  • 2 teaspoons olive oil
  • 1 garlic clove for rubbing on bread
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon pepper
  • balsamic glaze for drizzling

Instructions

Prepare the Tomato Topping

  • Prepare the tomato topping: Dice 4 Roma tomatoes and place in a medium bowl. Add 2–3 cloves minced garlic, ⅓ cup thinly sliced basil, ½ tsp salt, and ½ tsp black pepper. Stir to combine and let flavors meld for 10 minutes.

Toast the Bread

  • Toast the bread: Preheat oven to 400°F. Slice 1 baguette into ½-inch slices, lightly brush with olive oil, and bake for 8 minutes until crisp. While warm, rub each slice with 1 peeled garlic clove for extra flavor.

Assemble the Bruschetta

  • Assemble the bruschetta: Spread 4 oz of room-temperature goat cheese onto each toasted slice. Top with the tomato mixture and finish with a drizzle of balsamic glaze. Serve immediately for the best texture.

Notes

Tips No One Tells You

Toast bread on a cooling rack: Instead of leaving slices on the baking sheet after toasting, transfer them to a cooling rack. This prevents steam from making the bottoms soggy.
Prep tomatoes in advance like a pro: Dice tomatoes, add a pinch of salt, and let them sit in a colander for 10 minutes to drain excess liquid—prevents your topping from watering down the bread.
Garlic flavor hack: Rub the bread with garlic while it’s still warm from the oven. This infuses flavor without overpowering the topping.
Basil boost: Tear basil instead of cutting—it releases essential oils and gives a more vibrant aroma than slicing alone.
Cheese consistency tip: Let goat cheese sit at room temperature for 10–15 minutes before spreading. It spreads more smoothly and prevents tearing the bread.
Balsamic glaze drizzle trick: Warm the glaze slightly before drizzling—it flows better and creates prettier lines.
Make it a bite-sized party hit: Use a small cookie cutter or serrated knife to trim slices into uniform appetizer pieces—everyone gets a perfect bite.
Avoid soggy toppings: Only assemble bruschetta right before serving. If you’re prepping for a party, keep bread, cheese, and tomato mixture separate until guests arrive.
Flavor layering: Lightly brush olive oil on the tops of the bread after garlic rubbing—locks in flavor and prevents drying while keeping edges crisp.
Upgrade your balsamic: A high-quality aged balsamic glaze adds a sweet-tart punch that makes even simple bruschetta taste gourmet without extra effort.
