Preheat oven to 375°F (175°C). Line two baking sheets with parchment paper.
Cream together butter and both sugars until light and fluffy (about 2–3 minutes).
Beat in eggs one at a time, then stir in vanilla.
Mix flour, baking powder and salt in a separate bowl. Gradually add to the wet ingredients.
Fold in the chocolate chips, keeping reserved chips off to the side in a small bowl.
Scoop dough onto prepared baking sheets.. about the size of a golf ball, leaving room to spread.
Bake for 8-11 minutes, or until edges are golden and centers look just set.
Spot the tops of your cookies with the chocolate chips held back. Cool on the pan for 2-3 minutes before transferring to a wire rack. Sprinkle with flaky salt while warm if you’re fancy like that.
Set the chocolate chips by moving your warm cookies to a small baking sheet and moving them to the refrigerator while the rest of your cookies are baking. I let them sit for 2 new runs of cookies and then move the chilled cookies to a storage container and the warm cookies with melty chips to the refrigerator to set. Rinse and repeat to set your chips so you can store your cookies without a big mess.
