Ingredients

  • Cajun 15 Bean Soup - NO SOAK METHOD
  • 1 bag Cajun 15 Bean Soup - dry beans
  • 2 tbl olive oil
  • 2 tbl butter
  • 2 lbs ham hocks or ham bone
  • 12 oz andoullie sausage , sliced into medallions (could also use rotisserie chicken)
  • 1 medium sweet onion , diced
  • 6 cloves garlic , diced
  • 8 cups chicken broth
  • 10 oz petite diced tomatoes , minus juice
  • 1 cup white or brown rice
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  • Rinse beans under water and discard any debris
  • In a large sauce pan heat olive oil over medium / high heat
  • Sear ham hocks for 3-4 minutes each side or until skin is brown
  • Remove ham hocks and add butter - saute onion and garlic until fragrant but do not allow to brown
  • Add beans, ham hocks, onion, garlic, spices and chicken broth to a slow cooker and cook on High for 5 hours
  • After 5 hours, remove the ham hock and discard skin / bones - pick apart meat and add back into slow cooker
  • Add in tomatoes, sausage and rice - cook for another 45 minutes
  • Serve immediately with good crusty bread
