Chicken Rollatini are a quick and easy chicken recipe! Tender chicken roll ups with prosciutto and stuffed with mozzarella cheese, sun-dried tomatoes and basil then simmered to perfection in your favorite spaghetti sauce. Perfect stuffed chicken roll the whole family will love!
For the Chicken Rollatini, start by slicing your chicken breasts in half lengthwise so that you have two thinner chicken breast slices from each chicken breast. Then gently pound out each chicken breast to approximately 1/4 of an inch so that you have 6 thin chicken pieces.
Salt and pepper each slice and then lay chicken down on a slice of prosciutto. Add on top of the chicken, a slice of mozzarella cheese, a layer of sun-dried tomatoes and a few leaves of basil. Starting at the narrow end of the chicken breast, lightly hold in place the stuffing ingredients while tightly rolling up the chicken and secure the chicken with toothpicks or skewers when rolled. Repeat on all pieces of chicken.
Pour oil into a large skillet and set to medium high heat. Place chicken roll ups in the hot skillet, seam side down and lightly brown on all sides for about 2-3 minutes. Reduce heat to medium, pour spaghetti sauce over chicken and cover. Simmer for 12-15 minutes, turning chicken occasionally. Top with another slice of mozzarella cheese and basil for garnish. Serve immediately.
Notes
Chicken cutlets can be used for this chicken roll up recipe but you may want to reduce cooking time a bit if they are super thin.
Can't find prosciutto? It's usually sold in the deli section of the grocery store. I have also used pancetta which is different but which also works well in this recipe.
Grab your favorite jar of spaghetti sauce or marinara for this rollatini recipe or use a homemade sauce if you like it best.
These stuffed chicken rolls can be made ahead of time, then sear and cook them when you are ready.
When it comes to leftovers, this Chicken Rollatini can be reheated for 1 to 2 minutes in the microwave or in the oven preheated at 300 degrees for about 7-10 minutes.
Do yourself a favor and find yourself some 4 inch skewers. They work so much better than toothpicks!!!
