Chicken Rollatini are a quick and easy chicken recipe! Tender chicken roll ups with prosciutto and stuffed with mozzarella cheese, sun-dried tomatoes and basil then simmered to perfection in your favorite spaghetti sauce. Perfect stuffed chicken roll the whole family will love!

Fast. Easy. Delicious.  These three words are my favorite ways to describe any meal and this chicken rollatini recipe is one of my favorites.

Don’t get me wrong, I love to bake and I love dishes that take 3 hours to make and I honestly couldn’t survive without my slow cooker. 

But THIS girl is busy and 30 minute meals are the perfect busy weeknight solution. They sure beat drive-thru food fast or being stuck in the kitchen slaving over a hot stove. 

Cliche? Yes… the story of our every day lives?  Also, yes! 

It’s time to take back your evenings and get on board the 30 minute meal express .. trust me, once you try this Chicken Rollatini, you will never look back.

what is chicken rollatini?

A chicken rollatini is a chicken breast that has been pounded down and flattened. 

Then ingredients are laid out on the flattened chicken breast and then everything is rolled together to make a stuffed chicken roll up. 

The chicken roll up is then secured with a toothpick to hold everything in place and can then be breaded and fried or baked or simmered in a sauce to cook.

To make these Chicken Rollatini’s, you will need:

  • Chicken breasts
  • Fresh basil
  • Mozzarella cheese
  • Sun-dried tomatoes
  • Prosciutto
  • Vegetable or canola oil
  • Salt and pepper
  • Toothpicks or mini skewers

how do you make a stuffed chicken roll up?

To make this Chicken Rollatini, start by slicing your chicken breasts in half lengthwise so that you have two thinner chicken breast slices from each chicken breast. 

Gently pound out each chicken breast using the method outlined below so that you have 6 thin chicken pieces. 

Salt and pepper each slice and then lay chicken on top of a slice of prosciutto.

Add on top of the chicken, a slice of mozzarella cheese, a layer of sun-dried tomatoes and a few leaves of basil.

Starting at the narrow end of the chicken breast, lightly hold in place the stuffing ingredients while tightly rolling up the chicken.

Secure the chicken with toothpicks or skewers when rolled.  Repeat with all pieces of chicken.

Pour olive oil into a large skillet and set to medium high heat.

Place Chicken Rollatini in the hot skillet, seam side down and lightly brown on all sides for about 2-3 minutes. 

Reduce heat to medium, pour spaghetti sauce over chicken and cover.

Simmer for 12-15 minutes, turning chicken occasionally. Top with another slice of mozzarella cheese and basil for garnish.

Serve immediately.

pro tips for perfect chicken rollatini

  • Chicken cutlets can be used for this chicken roll up recipe but you may want to reduce cooking time a bit if they are super thin.
  • Can’t find prosciutto? It’s usually sold in the deli section of the grocery store. I have also used pancetta which is different but which also works well in this recipe.
  • Grab your favorite jar of spaghetti sauce or marinara for this rollatini recipe or use a homemade sauce if you like it best.
  • These stuffed chicken rolls can be made ahead of time, then sear and cook them when you are ready.
  • When it comes to leftovers, this Chicken Rollatini can be reheated for 1 to 2 minutes in the microwave or in the oven preheated at 300 degrees for about 7-10 minutes.
  • Do yourself a favor and find yourself some of these 4 inch skewers.  They work so much better than toothpicks!!!

how to pound a chicken breast

To pound out a chicken breast for Chicken Rollatini, start by doing one chicken breast at a time.

Place the chicken breast either inside a gallon zip-top bag (squeeze out all of the air before sealing) or place the breast between two pieces of plastic wrap.

Using the flat side of a meat mallet or a rolling pin, gently pound the chicken breast flat to approximately 1/4-inch thickness.

Once flat, remove chicken breast and set aside until you have finished with flattening all of the chicken.

Ingredients

30 Minute Chicken Rollatini

  • 3 chicken breasts, cut in half lengthwise
  • salt and pepper to taste
  • 1 - 2 tablespoon canola or vegetable oil
  • 12 - 15 large basil leaves
  • 8 ounces mozzarella cheese
  • 3 ounces sun-dried tomatoes
  • 6 pieces prosciutto, thin sliced
  • 24 ounces spaghetti or marinara sauce

Instructions

  • For the Chicken Rollatini, start by slicing your chicken breasts in half lengthwise so that you have two thinner chicken breast slices from each chicken breast.  Then gently pound out each chicken breast to approximately 1/4 of an inch so that you have 6 thin chicken pieces.  
  • Salt and pepper each slice and then lay chicken down on a slice of prosciutto. Add on top of the chicken, a slice of mozzarella cheese, a layer of sun-dried tomatoes and a few leaves of basil.     The minute I saw prosciutto and cheese I knew this recipe was for me. I can just taste it now. I’m going to have to make this week — I’ve got some pepper pesto that would be ideal in the center. And we always have homemade marinara sauce!!

    Love this dish! I also love chicken roll-ups! This recipe reminds me of a sort of inside-out chicken saltimbocca! But with red sauce which really does it for me! I will be trying this real soon as it looks so delicious!
