Do I have your attention? Seriously, that one word is all it took, right?
Tacos or any kind of Mexican food, usually gets made at least once a week in my house. It is my husband’s favorite kind of food and he will devour absolutely anything labeled ‘Mexican’. Tacos, enchiladas, even quesadillas and nacho flavored pizza rolls seem to fit in that niche for him. Bottom line, if he considers it Mexican-type food, he will eat it and he will be happy.
So, in my attempt to keep my husband happy, I threw together a dish that we refer to as Mexican Ziti. It’s basically meat, taco seasoning and pasta baked with a bunch of cheese. And I can’t explain it but for some reason, it’s just not my favorite. It makes no sense, there’s no reason why I should not absolutely love this dish. It has my favorite main food groups (taco seasoning and cheese and pasta) but for some reason it just doesn’t ring my bell. Mike, on the other hand, would eat this 352 days a year if he could. But because I am horrible person and it’s not something I really like he is often left begging for me to break down and make that for him and then I feel like a really bad wife because I don’t just do it anyway.
That got me thinking, why can’t I tweak this recipe so that both of us can enjoy it? … so that is exactly what I did! Say Hello to One Pot Easy Cheesy Taco Skillet!
First of all, I changed the pasta noodles. You can use any kind of pasta you want with this dish but he likes those huge super big XL penne type noodles and it’s just too much. So I changed up the pasta noodle to something a little more fun, a little less overbearing. Then I decided to not bake the dish, it seems to just dry out to me and it’s just unappealing. So that means it’s getting made on the stove top and considering if you throw all the ingredients in a skillet and let it go it would take no time at all to bring this dish together.
Woo Hoo!!! This One Pot Easy Cheesy Taco Skillet is a great 30 minute, one pot meal now and I have to tell you that I even ate leftovers the next day .. not that Mike left me much.
He’s happy, I’m happy and I really am happy that I could take a recipe that maybe wasn’t that awesome and turned it into something that everybody will enjoy. One Pot Easy Cheesy Taco Skillet
Ingredients
- 1 lb ground turkey or beef
- 1 package taco seasoning
- 3 cup beef or chicken broth
- 1 15oz container of salsa
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 8 oz rotini pasta uncooked
- 4 oz cream cheese
- 2 cup sharp cheddar cheese shredded
Instructions
- Start by browning your ground beef or turkey over medium high heat in a large skillet
- Once cooked, drain grease and return meat to skillet
- Add to the skillet the taco seasoning, broth, salsa, seasonings and uncooked pasta. Stir to combine
- Cover and bring to a boil. Stir occasionally and allow to cook for approximately 10 - 12 minutes or until your pasta is cooked al dente
- Remove cover and add in cream cheese. Stir until cheese has melted and then add in the shredded cheddar cheese. Continue stirring until it is melted and well incorporated
- Serve immediately 🙂
