Serving Size 30 phyllo cups

Ingredients

  • 30 phyllo shells two packages of shells
  • 4 ounces cream cheese, softened
  • 1 tablespoon mayo
  • 1 tablespoon sour cream
  • 6 pieces crispy cooked bacon, chopped OR one 3 oz. package of pre-cooked bacon pieces
  • 1 cup shredded sharp cheddar cheese
  • 1-2 jalapeno peppers, diced with seeds and ribs removed *see notes in post about spiciness
  • 2 cloves garlic
  • 1/2 teaspoon onion powder
  • 2 green onion, chopped small
  • salt and pepper to taste

Instructions

  • Start by pre-heating your oven to 375℉ and lining a baking pan with parchment paper.
  • In a medium bowl, mix softened cream cheese, mayo, sour cream, shredded cheddar, diced jalapeños, diced garlic, cooked crumbled bacon, salt/pepper to taste, and onion powder. Stir until well combined. Keep out a bit of the bacon, the jalapeno (if you like spicy) and the cheese to use as garnish.
  • Place phyllo shells on the baking sheet lined with parchment paper. Use a spoon or piping bag to fill each cup generously with the cheesy jalapeño mixture. Top your cups with the garnishes.. if you garnish with the jalapeno, the cups will be much spicier than if you don't.
  • Pop them in the oven for about 10–12 minutes or until bubbly and golden on top. When done, remove from oven and serve warm.

Tips and Tricks for Perfect Jalapeno Popper Bites

    • Use room-temp cream cheese so your filling blends smoothly.
    • Don’t overstuff the phyllo shells.. cheese expands, and no one wants a lava cheese blowout.
    • Use gloves or wash hands thoroughly after handling fresh jalapeños (seriously, no eye-rubbing).
    • Bake on parchment paper for easy cleanup.
    • Add a pinch of cayenne or hot sauce if you like a little extra punch.
    • Cooked bacon - Don't feel like cooking bacon? Grab the pre-cooked packages of bacon usually found in the salad dressing aisle.
