Key Ingredients & Why They Matter
- Mini Phyllo Shells – When it comes to making easy party appetizers, these are pre-made and pre-baked, these flaky little cups are crispy, buttery, and ready to party.. no rolling, layering, or crying over pastry dough required.
- Cream Cheese – The creamy base of every proper popper. Softened so it blends easy and gives that smooth, melty center.
- Mayonnaise – Adds a smooth richness and helps the filling stay moist and creamy without being overly dense. Just a couple of spoonful’s does the trick.
- Sour Cream – Brings a little tang and lightens up the cheesy filling, so you’re not left with a bite that’s too heavy. The cool contrast is chef’s kiss.
- Shredded Cheddar Cheese – Sharp cheddar adds bold flavor and a gooey, cheesy bite that balances the heat.
- Jalapeños – Fresh or pickled, these bring the heat. Dice them fine for bite-sized consistency. Remove seeds for less fire.
- Cooked Bacon – Smoky, crispy, and salty—adds texture and rounds out the richness of the filling.
- Onion Powder – A pinch of each adds flavor depth without overpowering the creamy base.
- Garlic Clove – Fresh garlic brings a bold, aromatic kick that deepens the flavor of the cheesy filling.
- Green Onion – For a little fresh crunch and pop of color on top after baking.
How to Make Jalapeño Popper Phyllo Cups
Step-by-Step Instructions:
- Cook your bacon and dice your jalapenos and garlic.
- Prep the Filling – In a medium bowl, mix softened cream cheese, mayo, sour cream, shredded cheddar, diced jalapeños, diced garlic, cooked crumbled bacon, salt and onion powder. Stir until well combined but keep some of the cheese and bacon pieces and jalapeno bits off to the side to garnish the tops. (see my note below about jalapeno bits)

- Fill the Phyllo Cups – Place phyllo shells on a baking sheet lined with parchment paper. Use a spoon or piping bag to fill each cup generously with the cheesy jalapeño mixture. Garnish with the extra bits you kept out.

- Bake ‘Em Up – Pop them in a 375°F oven for about 10–12 minutes or until bubbly and golden on top.

- Serve – Serve warm. (Or don’t.. people will eat them straight off the pan regardless.)
Mild or Spicy? Your Call!
These phyllo cups are super versatile.. without the fresh jalapeño garnish, they’re mild and creamy with just a little warmth from the filling. One jalapeno?… it’s barely noticeable without the extra jalapeno garnish. But if you’re like me and love a little extra kick, adding finely diced fresh jalapeño on top brings the heat in the best way.
You’ll notice in my blog photos, I tested both versions.. some cups are topped for the spice lovers, and others are kept mellow for the “I-don’t-do-spicy” crowd. Party-friendly and totally customizable! Use two jalapenos and you will definitely taste it even without the extra garnish.

Storage & Freezing
- Make Ahead: Prep the filling ahead of time and keep in the fridge until you re ready for up to 2 days. When it’s go-time, simply let your filling come to room temperature, fill your phyllo cups and bake.
- Freezer-Friendly: Assemble, freeze on a baking sheet until solid, then transfer to a freezer-safe bag. Bake straight from frozen at 375°F for 12–14 minutes.
- Leftovers: Store baked leftovers in the fridge, reheat in the oven or air fryer to crisp them back up.. microwave = soggy sadness.
Topping Variations
- Add chopped green chiles for a milder, tangy heat.
- Sprinkle with crushed Ritz or panko before baking for a crunchy topping.
- Drizzle with ranch or chipotle aioli after baking for a flavor boost.
- Swap cheddar for pepper jack for an extra spicy kick.
- Add a touch of smoked paprika to the filling for deeper flavor.
Tips & Tricks
- Use room-temp cream cheese so your filling blends smoothly.
- Don’t overstuff these cream cheese bacon jalapeño cups.. cheese expands, and no one wants a lava cheese blowout.
- Use gloves or wash hands thoroughly after handling fresh jalapeños (seriously, no eye-rubbing).
- Bake on parchment paper for easy cleanup.
- Add a pinch of cayenne or hot sauce if you like a little extra punch.
- Cooked bacon – Don’t feel like cooking bacon? Grab the pre-cooked packages of bacon usually found in the salad dressing aisle. That’s what I do!
- Mini Food Processor – Honestly, my most prized possession in the kitchen. Let it do the heavy lifting on the garlic and jalapeno.

Where to Buy Phyllo Cups
You can usually find mini phyllo cups in the freezer section of most grocery stores, near the frozen pie crusts and puff pastry. Brands like Athens are popular and super reliable.
Stock up when you see them.. they keep beautifully in the freezer and turn any last-minute gathering into a party. No phyllo cups? Use mini wonton wrappers in a mini muffin tin as a DIY backup!

So whether you’re feeding a rowdy game day crowd or trying to impress at the holiday potluck, these Jalapeño Popper Phyllo Cups bring the party.
They’re bite-sized, easy to make ahead, and disappear faster than your team’s lead in the fourth quarter. Bonus: they look way fancier than they actually are.. win-win!
