Ingredients

Chickpea Salad

  • 2 15 oz cans chickpeas, drained and rinsed
  • 8 ounces crumbled or cubed feta cheese
  • 1/3 cup red onion finely diced
  • 1/3 cup pickled red onion finely diced
  • 1/8 cup fresh mint diced
  • 3/4 cup pistachios chopped
  • 1/2 cup fresh parsley chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Lemon Dressing

  • 3 tablespoons extra virgin olive oil
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 1-2 garlic cloves grated
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  • Prepare the Dressing: In a small bowl, whisk together olive oil, lemon juice, lemon zest, grated garlic, Dijon mustard, salt, and pepper.
  • Mix the Ingredients: In a large bowl, combine chickpeas, feta, red onion, pickled red onion, mint, pistachios and parsley along with salt and pepper.
  • Toss & Serve: Drizzle the dressing over the salad and toss gently to combine. Adjust salt and pepper as needed. Serve immediately or refrigerate for later!

  • Pickled Red Onions: These can usually be found in the canned veggie aisle of your super market. I grab the sweet pickled red onions and they are not strong.. just a bit tangy! If you choose to leave them out, substitute with a bit of extra fresh red onion instead.
