The only thing better than a cookie is one that is so mammoth that it needs to be baked into a bar.  Because let’s be honest, who only ever eats one cookie at a single sitting?  Who finishes that one little cookie and says ‘Yup, that will do it for me!’ and walks away? No. One. That’s why these Frosted Sugar Cookie Bars are brilliant … revelotionary… life changing!!!  Ok, I may have gone a bit too far with life changing but these Frosted Sugar Cookie Bars are seriously the best way to make cream cheese sugar cookies because instead of spooning out scoop after scoop of cookie dough out onto a baking pan (boring!!) you spread the sugar cookie dough out onto a pan and bake it that way.  Freakin’ genius!!!

Baking Frosted Sugar Cookie Bars in pan form is beneficial on several levels, in this girls humble opinion.  First, you essentially are taking the volume of three sugar cookies and compacting them into a socially acceptable format.  Take three sugar cookies at once at your company pot luck, people may talk.  Walk off with one Frosted Sugar Cookie Bar… completely acceptable. Hey, I don’t make the rules.. I’m just here to help you get around them.  Second, let’s discuss frosting.  I think we can all agree that no matter what the buttercream frosting is sitting on or in, whatever it is, that object is simply a vehicle for delivering the frosting to your face.  Disagree?  Do we need to contemplate how many times we have all spooned forbidden scoops of frosting out of the frosting tub when no one was looking?  Don’t worry.. I’m not here to judge, after all we are friends – you don’t tell on me and I won’t tell on you.  Third, time and energy.  I don’t care who you are, when you are baking a large amount of cookies by the second round of 8-10 minute baking time rotations, the novelty of making cookies is long gone.  Bake your Frosted Sugar Cookie Bars in bar form and it is a one stop shop.  One pan, one time, no rotation…. and we’re done!

MARGARINE OR BUTTER FOR BAKING COOKIES?

Margarine is not recommended for most baking since it has as little as 35% fat and the rest is mostly water. Fat is important when it comes to baking. Only use margarine in a recipe that specifies it. it is not recommended to use margarine in a cookie recipe that calls for butter as you will end up with cookies that spread out too thin and end up burned.

DO FROSTED SUGAR COOKIE BARS NEED TO BE REFRIGERATED?

Frosted Sugar Cookie Bars can be stored at room temperature in an air tight containment or a zip top bag for 2 to 3 days with no problems… like they will last that long!!  Keep in mind that Frosted Sugar Cookie Bars can be kept at room temperature in an airtight container if you are using homemade buttercream frosting because the sugar stabilizes the milk and the Frosted Sugar Cookie Bars are considered safe to eat. If you are using a store bought tub of icing, you will want to refrigerate your Frosted Sugar Cookie Bars.

HOW DO YOU MAKE FROSTED SUGAR COOKIE BARS?

Easy! To make these Frosted Sugar Cookie Bars, preheat oven to 350. Prepare a 9 x 13 pan by lining it with parchment paper with enough to hang over the sides. In a large bowl, cream together the butter and cream cheese until creamy. Mix in the sugar, egg and egg yolk and then your vanilla extract.

In a separate bowl, sift together the flour, baking soda, cornstarch, baking powder, and salt. Add the flour mixture slowly to the butter mixture and mix until fully combined.  This Frosted Sugar Cookie Bar batter is very thick so I would recommend using an electric mixer to this point.  Spoon (glop!) the batter into the prepared pan and using the back of a spoon .. or your hands.. press into the pan until even and bake for 16 – 18 minutes. Remove from oven and let cool COMPLETELY!!  When the Frosted Sugar Cookie Bars are completely cool,  cream together butter, heavy whipping cream, vanilla extract and powdered sugar to bring together the frosting.

Divide the buttercream frosting into three smaller bowls and stir in a few drops of differnt color food coloring to each bowl to make it fun.  Remove your Sugar Cookie Bars from the pan by lifting up the parchment paper and drop dollops of the different colored frosting on top of the Sugar Cookie Bars.

Lightly swirl the colors together until your whole Sugar Cookie Bars is frosted. Cut and serve.

Ingredients

Sugar Cookie Bars

  • 1 cup butter softened
  • 8 ounces cream cheese room temperature
  • 1 1/2 cup sugar
  • 1 egg room temperature
  • 1 egg yolk room temperature
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 tsp salt

Buttercream Frosting

  • 1 cup butter
  • 4 - 6 cups powdered sugar
  • 2 teaspoon vanilla extract
  • 2 tablespoons heavy whipping cream or whole milk
  • 1/4 tsp salt

Instructions

  • To make these Frosted Sugar Cookie Bars, preheat oven to 350. Prepare a 9 x 13 pan by lining it with parchment paper with enough to hang over the sides.
  • In a large bowl, cream together the butter and cream cheese until creamy. Mix in the sugar, egg and egg yolk and then your vanilla extract.   • To make the buttercream frosting, cream together butter, sifted powdered sugar, vanilla extract, salt and cream together. Divide the buttercream frosting into three smaller bowls and stir in a few drops of differnt color food coloring to each bowl. Remove your Sugar Cookie Bars from the pan by lifting up the parchment paper and drop dollops of the different colored frosting on top of the Sugar Cookie Bars. Lightly swirl the colors together until your whole Sugar Cookie Bars is frosted. Cut and serve.

    Sugar cookies never last long in our family. I’ve never been successful at finding a good homemade cookie frosting recipe, I’ll be trying yours for sure. I secretly love the colors of frosting you chose as well.

    Those cookies are so pretty!! I love what you’ve done with the frosting, the swirls and the colors are gorgeous!! And you’re right. Go somewhere and grab 3 or more cookies and you look like a pig — take one bar and you look like you have manners. Great idea making them into bars.

    Oh my the kids must love this. We love making cookies and I often frost them but mostly with Royal Icing or fondant. Buttercream looks wonderful. Sounds so perfect.

    I love sugar cookies, these look terrific! And to your point, people may give you “the look” if you eat 6 cookies but probably not if you eat two bars.
