Do you smell that?  Yup, it’s the beautiful smell of lighter fluid! It’s time to put away those winter clothes and break out the flip flops and barbeque tongs. This is a supper busy time of year we are entering.  Sure, December gets all the credit but springtime and summer have so much activity going on, you need to have a Go-To when it comes to getting a tasty, easy dinner on the table to feed your busy family.  I work a 40 hour job on top of running this food blog.  My husband works 60 hours a week and also just started a photography business.  We also have four dogs who think the our worlds revolve around them.  You know how it is.. kids, work, laundry. I need a hearty delicious dinner that isn’t going to take forever to make and with the warmer weather, I just want to let my barbeque grill do all the heavy lifting. When it comes to serving up an easy weeknight meal, my choice is always going to be something simple but also food that is made with real, all-natural ingredients and tastes AMAZING.  My standby used to always be chicken.  Chicken.. chicken.. chicken. Now, I put the chicken in the freezer for a rainy day and reach for my Smithfield Marinated Fresh Pork as my first choice. I was tired, I was in a hurry, I was frustrated with the idea of chicken… again! Then I spotted it!!! Right there in the Walmart meat section was a variety of Smithfield Marinated Fresh Pork products. 

Their pork products are  are slow-marinated in delicious seasonings so there is no need to spend time marinating the pork when you get home, Smithfield® has done all the hard work for you. Now, I am a garlic addict so I grabbed up a few (yes… few) packages of Smithfield Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin and a few veggies to make a quick pineapple salsa and some corn on the cob and I was on the way home with a grocery bag full of happiness.

So I get home and asked my husband to do what he loves best .. fire up that grill!!!

Talk about a perfect meal, my hubby grabbed up that Smithfield Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin and threw that on the grill, I made a quick pineapple salsa and in just 30 minutes, we had a delicious dinner of Grilled Pork Tacos with Pineapple Salsa on the table and there were just enough leftovers to take to lunch the next day.

I added the grilled pork and salsa to a bowl of rice and a squeeze of lime and my tummy was HAPPY!!  You have to love a product that is just as good the next day as it was first day you made it.

Grilled Pork Tacos with Pineapple Salsa

Grilled Pork Tacos with Pineapple Salsa using Smithfield Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin is the perfect easy 30 minute meal to celebrate the warmer weather with while treating your family to a delicious meal any busy night of the week.

Ingredients

  • 1 package Smithfield Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin
  • 12 small flour tortillas

Pineapple Salsa

  • 2 cups fresh pineapple chopped
  • 2 jalapeno seeded, ribbed, diced
  • 1/2 cup cilantro diced
  • 1/3 cup red onion diced
  • 1/4 teaspoon cumin
  • 1 lime juiced
  • salt and pepper to taste

Instructions

  • Start by adding charcoal and lighter fluid to your grill and heating until charcoal is ashy and white. Then brush the grill with vegetable oil and remove the Smithfield Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin from its packaging and place in the center of grate. Discard bag with marinade. Cover and cook for 15 to 20 minutes, turning every 1 1/2 to 2 minutes, until the tenderloin reaches an internal temperature of 140 degrees F.
  • While the pork is grilling, chop your fresh pineapple into bite size pieces and add to a medium sized mixing bowl.  Add in diced jalapenos, cilantro, chopped red onion, cumin and salt and pepper to taste.  Finish off by add lime juice and stir to combine.
  • Once pork is done cooking, transfer to a plate and cover with tin foil to rest.  After 10 minutes, cut pork medallions and add to the small tortilla wraps.  Top with pineapple salsa and an extra squeeze of lime.  Enjoy!!
