Inspiration comes at the weirdest times.  When you know you have a deadline or an important meal to plan and you are trying to be magnificent and create a new magical dish that will WOW the entire world with your brilliance and creativity… that’s usually when you end up beating your head against the counter and praying you have enough Ramen packets in the pantry.  Standing in a clothing store, looking at a shirt with a purple rhinestone elephant on it (???) and Cajun Chicken Alfredo Pasta explodes into your brain and you leave the ugly elephant shirt behind and rush home, rudely tailgating innocents and yelling at Grandma to get out of your way, all the while trying to remember every part of the recipe your brain exploded into itself so you will not forget even the smallest of ingredients.

Life’s fun like that.

But back to what is important… This Cajun Chicken Alfredo Pasta dish is amazing!  It is creamy and spicy and very fast to put together.  Cajun Chicken Alfredo Pasta is perfect when you are in need of a comfort meal fix or if you are serving company. Dress it up or strip it down, serve it with chicken or sausage or even seafood or even add in vegetables, any way you serve it, this Cajun Chicken Alfredo Pasta meal is a winner.

WHAT SEASONINGS ARE IN CAJUN SEASONING?

Cajun seasoning is a spicy mixture of salt, garlic powder, paprika, black pepper, onion powder, cayenne pepper, oregano, thyme, and red pepper flakes. You can make your own Cajun seasoning at home or purchase a premade spice at your local grocery store in the ‘spice’ aisle.

WHERE DO YOU FIND SUN DRIED TOMATOES IN THE GROCERY STORE?

You can most often find sun dried tomatoes in the canned/dried fruit section, the deli section, or the produce section. They are often packaged dried in a pouch or sold submersed in oil. I find mine in the produce section of my grocery store.

HOW DO YOU MAKE CAJUN CHICKEN ALFREDO PASTA?

Easy! To make Cajun Chicken Alfredo Pasta, start by cutting up your chicken breasts into bite sized pieces and moving them to a large zip top bag.  Add in 2 tablespoons of Cajun or Creole seasoning, seal the bag and toss to coat the chicken pieces in the seasoning.  Start making your pasta by bringing a large pot of salted water to boil and add in your pasta. Cook according to package instructions.  Drain and set pasta aside.

While your pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium high heat. Add in the chicken pieces and cook through until no longer pink, about 5 – 7 minutes.  Remove the chicken pieces and set aside.

Add butter to the skillet and once melted whisk in the flour. Add chicken stock, milk, red pepper flakes and seasonings and bring to a low boil. Add in diced sun dried tomatoes, basil, green onions, sour cream and Parmesan cheese and stir to combine.

Add in the chicken and pasta and remaining Cajun seasoning and mix until everything has been incorporated.  Garnish Cajun Chicken Alfredo Pasta with more basil. Serve immediately.

This Cajun Chicken Alfredo Pasta meal moves FAST and is perfect for a busy weeknight meal.  This is a spicy dish so if you have someone in your house who doesn’t care for the heat, simply reduce the amount of red pepper flakes you use.

Ingredients

  • 2 tablespoons olive oil
  • 2 1 /2 tablespoons Cajun / Creole seasoning divided
  • 2 large chicken breasts
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cup whole milk
  • 1 1/2 cup chicken stock
  • 1/2 teaspoon salt
  • 1 tablespoon red pepper flakes
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 4 ounces sun-dried tomatoes in oil diced
  • 1/4 cup sour cream
  • 1/3 cup fresh basil diced
  • 1/2 cup Parmesan cheese grated
  • 6 scallions chopped
  • 1 pound rotini pasta

Instructions
