DO I NEED TO USE PURPLE POTATOES?
The simple answer to this is NO!! You can make your Purple Potato Breakfast Skillet with any potatoes you have on hand, red potatoes, yellow potatoes, white potatoes… but the purple potatoes are fun and sometimes we all need a little but of something playful in our lives 🙂
DO I NEED TO HAVE A CAST IRON PAN TO MAKE THIS PURPLE POTATO BREAKFAST SKILLET?
No, you can make this Purple Potato Breakfast Skillet using a large non-stick skillet or a frying pan. You can even make this on a large griddle if you are feeding a crowd. I like to use my cast iron pan for this Purple Potato Breakfast Skillet because it distributes heats evenly and I am a fan of cast iron anything.
CAN I GO BUCK WILD AND CUSTOMIZE THIS PURPLE POTATO BREAKFAST SKILLET?
By all means, go crazy!! Food isn’t meant to be complicated or unforgiving. Yes, there are some dishes you need to follow the instruction to a T so that the end result is… um … EDIBLE!! But when it comes to breakfast skillets, personalize your breakfast in whatever manner makes you happy. This is just a starting point!
HOW DO I MAKE A PURPLE POTATO BREAKFAST SKILLET?
This Purple Potato Breakfast Skillet couldn’t be easier to make. Start by adding 2 tablespoons of vegetable oil to a large skillet and heat over medium-high heat. While that is coming to temperature, wash and quarter the baby purple potatoes into bite sized pieces. Season liberally and stir to coat. Add potatoes to the skillet and cover, letting cook for 10 minutes and stirring occasionally. Then remove cover and add pancetta. Stir to combine and continue to cook until potatoes and pancetta crisp up. Dice up green onions and add to your skillet. In a separate pan, add 1 tablespoon of butter and let melt over medium heat. Add in 3 eggs and cover to make sunny side up eggs. Let cook for approximately 3-5 minutes or until the whites are set but the yolks are still runny. Once cooked, move them to your skillet and serve immediately.

Purple Potato Breakfast Skillet
Ingredients
- 28 ounces baby purple potatoes or 4 cups
- 4 ounces pancetta diced
- 2 tablespoons vegetable oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/4 teaspoon cayenne or jalapeno powder
- 3 green onions chopped
- 3 large eggs
- 1 tablespoon butter melted
Instructions
- Start by adding 2 tablespoons of vegetable oil to a large skillet and heat over medium-high heat. While that is coming to temperature, wash and quarter the baby purple potatoes into bite sized pieces.
