Ingredients

  • 1 pound ground turkey
  • 10 ounce can cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt, to taste
  • 1/2 teaspoon black pepper, to taste
  • 10 ounce can of corn
  • 1 cup frozen peas
  • 24 ounce tub of pre-cooked mashed potatoes
  • 8 ounces shredded cheddar cheese

Instructions

  • Preheat oven to 350 degrees.
    Start by adding oil to a large skillet over medium high heat and then brown ground turkey until cooked through and no longer pink.
  • Add in cream of chicken soup and seasonings and stir to combine. 
    Microwave your mashed potatoes for 4 minutes on High, remove and stir.
    Pour ground turkey mixture into a 9x13 baking pan.
  • Sprinkle corn and peas evenly on top of the turkey.
    Add mashed potatoes to the top of the veggies and using the back of a spoon or spatula, spread into an even layer.
    Add shredded cheese on top and bake for 20 minutes.
    Remove from oven, let sit for 5 minutes (it will be soo hot!!) and then serve immediately.

Pro Tips for Perfect Shepherd's Pie

  • Not a fan of ground turkey? Swap this out for ground beef instead.
  • Want to add diced carrots? Go for it! Don't like peas? Leave them out! Make this YOUR own.
  • I grab the tubs of pre-made mashed potatoes like Simply Potatoes or Bob Evans. They are cooked mashed potatoes you just need to microwave. If this is not your ideal way, three Russet potatoes would be all you need to substitute the pre-made potatoes. Just cut them, boil them and mash them with some butter.
