I am the first one to admit that I have not always been a fan of vegetables. As a child, the only vegetables I would even consider eating were carrots and corn. Not coincidentally, both are sweet and crunchy and that was the only way those little veggies were getting into my belly. Anything Green? Forget About It! I had absolutely no interest or desire or affection for anything green food, no matter how you dress them up.
Parmesan cheese? Nope! Lemon? No way! Butter? Move aside!
And don’t think that you can hide something like broccoli in my macaroni and cheese and I would just follow your lead and happily consume the healthy goodness without even knowing it was there. This chick was way too smart for those tricks.
As I grew up, I pretty much followed the same basic rule of carrots and corn. Years went by and now as a full-fledged adult (or so they say) I am now a lot more accepting of all things green and leafy when it comes to trying to add in healthier foods to my diet. I don’t like all vegetables, I can’t even say I’ve tried all vegetables but I am at least able to incorporate green beans, asparagus and (Yes!) even brussel sprouts into my weekly food choices.
I’ve even been known to hide some kale and spinach in a smoothie before 🙂
All that being said, it does not mean that I don’t still love my old friend carrots. But now with a more experienced palate .. at least I like to think so.. I can now dress those carrots up in a way that everyone, kids and adults alike, will appreciate. Plain carrots are fine but WOW are they a thousand times better when you add a little pinch of sweet and spicy to them. These Spicy Honey Glazed Carrots are my new favorite go to when I am tired of the green and want to regress back over to the orange. And talk about the perfect side dish? Spicy Honey Glazed Carrots
- 4 cups sliced carrots
- 2 tbl olive oil
- 5 tbl honey divided
- 1/2 tsp cayenne pepper
- 1/4 tsp salt
- Start by lining a large baking sheet with parchment paper and preheat oven to 400 degrees
- In a large bowl, toss together carrots, olive oil, 2 tbl of honey, cayenne and salt until well mixed
- Pour carrots onto parchment paper and spread out into an even layer
- Cook for 15 - 20 minutes and remove from oven. Transfer to a serving bowl and add remaining honey. Mix well and check for seasoning
- Serve immediately
