Blueberry Pecan Baked Oatmeal

Be still, little pitter-patter of my easy breakfast loving heart! Like many of us, breakfast can be a struggle for me. Oh no, don’t get me wrong .. I L-O-V-E an easy breakfast recipe like my Overnight Challah French Toast Casserole, Cranberry Orange Cake and my Purple Potato Breakfast Skillet but I normally A) do not plan properly and B) lack early morning motivation to accomplish an amazing breakfast each morning. 

To be honest, (… we can be honest, can’t we?  We are all friends here, right?) my daily breakfast routine 99% of the time consists of a Dunkin Donuts XL coffee with cream and a cheese stick.

That’s the breakfast of champions right there! But the dream to be an organized adult and make sound healthy breakfast choices with little effort and even less time is real.  Does such a thing exist? 

This Blueberry Pecan Baked Oatmeal is like a warm hug in a bowl. Talk about a warm breakfast casserole, this baked oatmeal is made with oats, milk, fresh blueberries and pecans to serve up the ultimate breakfast recipe.

To make this Blueberry Pecan Baked Oatmeal, you will need:

  • Old fashioned oats – sure to deliver the right amount of hearty texture
  • Brown sugar – just a bit of sweetness to round out the recipe
  • Baking Powder – to lift up your baked oatmeal
  • Eggs – to bind all of the ingredients together and add a bit of extra protein
  • Maple syrup – adds that warm comforting flavor and adds a bit of sweetness
  • Milk – this baked oatmeal can be made with any variety of milk you like.. whole milk, almond milk, coconut milk, skim milk ..
  • Butter – adding in a bit of melted butter keeps the oatmeal from tasting hard and rubbery
  • Blueberries – fresh or frozen, the perfect pop of sweet, refreshing fruit! 
  • Pecans – flavor and the perfect amount of crunch
  • Vanilla extract – Flavor
  • Salt and cinnamon – even MORE flavor

Baked Blueberry Pecan Oatmeal

HOW TO MAKE BLUEBERRY PECAN OATMEAL

To make your Baked Blueberry Pecan Oatmeal, start by preheating oven to 350 degrees and lightly butter a 9 x 13 baking pan. Mix old fashioned oats, brown sugar, baking powder, cinnamon, salt and most of the chopped pecans in a large mixing bowl.

In a separate bowl, combine eggs, vanilla, melted butter, syrup and milk. Pour half of your oat mixture into the baking pan, smoothing to make an even layer and then add a layer on top of half of your blueberries. Pour on and even out the remaining oat mixture. Evenly pour your egg / milk mixture over the entire pan of oats, lightly pressing the oats down to make sure they are all covered in the milk.

Baked Blueberry Pecan Oatmeal wet ingredients

Sprinkle on the remaining blueberries and reserved pecans.  Bake for 40 – 45 minutes or until the top is golden brown.  Remove and let set for 10 – 15 minutes before serving. Leftovers can be stored in the refrigerator for 3 – 4 days and can be reheated in the microwave for 30 – 60 seconds.

CAN YOU USE INSTANT OATMEAL FOR THIS RECIPE?

Instant oatmeal is not the same as regular oatmeal because it is thinly cut, processed and flavored. Instant oatmeal doesn’t bring the same structure to baked goods as regular oats or quick oats do. For that reason, I would not recommend using instant oatmeal in any baking recipes.

PRO TIPS FOR PERFECT BLUEBERRY PECAN BAKED OATMEAL

  • To make this breakfast casserole ahead of time, bake it and let it completely cool before storing it covered in the refrigerator. To heat up, microwave for 30-60 seconds or cover and bake at 375 degrees for 10-15 minutes.
  • Don’t over bake the baked oatmeal.  You want this to be creamy, crunchy and soft.
  • Want to add even more ompf to this easy breakfast idea? Top it off with your favorite Greek yogurt.
  • Not a fan of blueberries? Substitute the blueberries with your favorite fresh fruit, chocolate chips, dried cranberries or peanut butter.
  • Get crazy with this baked oatmeal recipe… heat it up and throw a scoop of ice cream or frozen yogurt on top of it and BOOM! .. now you have a healthy dessert idea too!
  • Looking to make this gluten free? Swap out the old fashioned oats with certified gluten-free oats.

Side note: Before anyone cyber yells at me, yes..  this baked oatmeal recipe is made with a few ingredients that don’t make this the healthiest breakfast ever but it’s better than a lot of alternatives.  You can certainly use substitutions for the butter, sugar and syrup to make this heart healthier for you, if you choose.

    Added lemon zest from one lemon to the dry ingredients and the lemon juice of of the same lemon to the wet ingredients. Super yummy addition. Also used 1/4 cup ground flax seed mixed in 1/2 cup of water as a replace for eggs and it turned out great.

    I don’t understand people who don’t like breakfast. I love that meal! I look forward to it and I’d be grumpy if I didn’t get my nourishment first thing. Now the oatmeal bake is ideal. You can make it ahead and warm up a piece and you’re ready to go. YUM!! It looks delish.

    This recipe came to me at the perfect time! I’ve been eating oatmeal a lot because I am breastfeeding and have gotten a bit bored with my usual oats. I haven’t tried baking them though!! Such a great idea! It’s like an oatmeal cookie for breakfast. 🙂
