When it comes to breakfast meal prep ideas, one of my favorites has to be these Freezer Breakfast Burritos. Baked oatmeal is great, make ahead breakfast sandwiches are awesome but there’s just something special about meal prep breakfast burritos. I think it’s the tater tots.

These frozen breakfast burritos are the perfect grab and go breakfast meal prep and perfect for busy mornings.

Plus a filling breakfast helps cut down on snacking, which is always a good thing.

What’s In a Breakfast Burrito?

An easier question is what ISN’T in a breakfast burrito? These freezer burritos can be made any way you like them. 

For this meal prep burrito recipe, I am using eggs, shredded cheese and Canadian bacon as my main ingredients but here are some additional ideas:

  • Meat: Bacon, crumbled sausage, diced ham, chorizo
  • Cheese: Shredded cheddar, mozzarella, pepper jack, feta, Swiss
  • Vegetables: Spinach, scallions, red green yellow peppers, diced tomatoes
  • Extras: hash browns, pico de gallo, red or green chunky salsa, seasoned tofu, refried beans, black beans

Make Ahead Burrito Ingredients

Let’s take a minute to go over what ingredients you will need to make these meal prep burritos:

  • Eggs
  • Milk or cream
  • Shredded cheese
  • Diced jalapenos (fresh or jarred)
  • Canadian bacon
  • Onion
  • Parsley (fresh or dried)
  • Tator tots
  • Flour tortillas
  • Olive oil / butter

How Do You Make Breakfast Burritos?

  • Start by prepping your ingredients first so you can assemble quickly and efficiently.
  • Dice your onions and jalapenos, shred your cheese, cut up your Canadian bacon.
  • Preheat oven to 400 degrees and lightly spray a baking sheet with non-stick spray.
  • Cook tator tots according to package instructions and set aside to cool.
  • Add olive oil to skillet over medium-high heat.
  • Add diced Canadian bacon and heat for 1 to 2 minutes until warmed through. 
  • Stir in diced onion and cook for additional 1 to 2 minutes.

  • In a separate mixing bowl, whisk eggs also with a dash of salt and pepper.
  • Add 1 tablespoon of butter to skillet and once melted, lower heat to Low and add eggs.
  • Gently whisk in milk/cream and cook until your scrambled eggs are thick and fluffy with no visible remaining liquid, stirring frequently.
  • After about 3 to 5 minutes your eggs should be cooked, remove from heat and stir in parsley. Let cool slightly before using.
  • Lay out a tortilla and line up tater tots.

  • Top with eggs, shredded cheese and diced jalapeno.

  • Fold in opposite sides of the tortilla, then roll the tortilla up tightly to make a burrito.

How To Freeze Burritos for Meal Prep

  • Place your breakfast burrito in the center of a large piece of aluminum foil and fold the bottom up and the top down to cover your burrito. Fold the sides to the center the burrito and then roll to wrap tightly.
  • Move foil wrapped breakfast burritos to the freezer to freeze in a single layer before moving them to a large zip top bag for easy freezer storage.
  • Your frozen breakfast burritos are good in the freezer up to 3 months.

How to Reheat Frozen Burritos

Thawed to Oven: Move your breakfast burrito to the refrigerator the night before so it has time to thaw. Remove from the zip-top bag and bake your burrito still in its aluminum foil in a 350 degree oven for 20 minutes, turning it halfway through its cooking time. To toast, unwrap your burrito and bake an additional 5 minutes.

Thawed to Skillet: Move your breakfast burrito to the refrigerator the night before so it has time to thaw. Add a few drops of oil to a skillet and heat it over medium. Remove from the zip-top bag and the foil and place your burrito in the skillet and turn up the heat to medium. Cover the skillet with a lid to capture the heat and cook the burrito for 5 minutes. Flip the burrito, put the lid back on, and cook it for 5 more minutes.  

Thawed to Air Fryer: Preheat your air fryer to 350 degrees F. Remove from the zip-top bag and the foil and place your burrito in the air fryer basket and reheat for 2-3 minutes or until warmed through. 

Freezer to Oven: Move your breakfast burrito to the refrigerator the night before so it has time to thaw. Remove from the zip-top bag and bake your burrito still in its aluminum foil in a 350 degree oven for 45 minutes, turning it halfway through its cooking time. To toast, unwrap your burrito and bake an additional 5 minutes.

Freezer to Microwave: Remove the breakfast burrito from the aluminum foil and place on a microwave safe dish. Cover with a damp paper towel and microwave for 1 minute. Turn your burrito, then cook for an additional 1 to 2 minutes until warm.

Pro Tips for Perfect Freezer Burritos

  • Too much moisture will lead to a soggy breakfast burrito. Be sure to sauté high moisture vegetable before adding them to your meal prep burritos.
  • Be sure to let your breakfast burrito ingredients cool to room temperature before building your freezer burritos. This also helps avoid soggy burritos.
  • Customize these make ahead burritos any way you like. Go wild!
  • Grab the large tortillas for this meal prep breakfast idea. You want 8-12 inch burritos, anything less won’t be large enough to hold your ingredients.
  • Corn tortillas are tasty but won’t work for these breakfast burritos. They don’t freeze well in this capacity so be sure to grab the flour tortillas this time.
  • Freeze your burritos in a single layer before moving them to your zip top bag. They will freeze faster and it helps avoid a soggy burrito.

  • 1 tablespoon butter
  • 12 large eggs
  • 1/8 cup whole milk or heavy cream
  • 1 cup shredded cheddar cheese
  • 1 - 2 tablespoons parsley, fresh or dried
  • 1 - 2 tablespoons diced jalapenos, to taste
  • 8 large flour tortillas

  • To reheat, remove from freezer bag, remove foil and microwave for 2 to 4 minutes, flipping burrito over halfway through heat time OR leave wrapped in foil and heat in 400 degree oven for 30 minutes.
