Who doesn’t love their slow cooker? Talk about the one thing in the kitchen I can’t live without, my slow cooker gets used at least once a week regardless if it is hot, cold or raining outside. When life gets crazy and you don’t have time to stop at the store or look for a new recipe to made, firing up that slow cooker and going about your day is the best way to solve that problem. That’s what makes this Slow Cooker Salsa Verde Chicken recipe so perfect … you drop those ingredients in, turn that slow cooker ON and go! This is seriously the perfect meal for busy families.
WHAT IS SALSA VERDE?
Mexican Salsa Verde or ‘green sauce’ is generally prepared with tomatillos, serrano chiles, cilantro, garlic and onion. It is very easy to make and can be as spicy or mild as you prefer. The green color mostly comes from the tomatillos, which are a small green fruit. You can made homemade Salsa Verde very easily or find a pre-made jar of Salsa Verde where you find taco seasonings and such in your local supermarket.
HOW DO I EAT SALSA VERDE CHICKEN?
So many choices!! I like to make Slow Cooker Salsa Verde Chicken tacos with Pineapple Mango Salsa…. or Chipotle Tomato Salsa … or Chipotle Corn Salsa. I also love using it in enchiladas, serving my Salsa Verde Chicken over rice or adding it to cheesy pasta and making a casserole with it. This night, I added Slow Cooker Salsa Verde Chicken to soft tacos, added both my Chipotle Tomato Salsa and my Chipotle Corn Salsa, topped with queso fresco cheese, a sprinkle of cilantro and a squeeze of lime. Delish!!!
HOW DO I MAKE SLOW COOKER SALSA VERDE CHICKEN?
Easy. Add five uncooked chicken breasts to your slow cooker and pour in chicken broth, spices and your favorite pre-made jar of salsa verde. Set your slow cooker to Low and cook for 7 – 8 hours. Once cooked, shred chicken with a fork and let stew in the sauce another 15 minutes. Remove chicken with a slotted spoon and serve immediately.

- 16 ounches pre-made salsa verde
- 1 tablespoon cumin
- 2 teaspoon garlic powder
- 2 teaspoon onion powder
- 1/2 teaspoon salt
