Rice or pasta? This is the question asked most often in my house when it comes to deciding a side dish for the nights dinner. I am most often Team Pasta and my hubby is always Captain of Team Rice. But how many times can you have rice in a weeks time? How many different ways can you easily serve up rice without needing 15 different ingredients and a full recipe card? If this sounds familiar, let me introduce you to the simplest recipe you will ever need, Chipotle Cilantro Lime Rice.

Nevermind that Chipotle Cilantro Lime Rice is the foundation for any good Chipotle Mexican Grill Carnitas bowl, Chipotle Cilantro Lime Rice is an amazing versatile side dish in it’s own right. Perfect on it’s own or combining to make a meal, Chipotle Cilantro Lime Rice is the ultimate paring of tender white rice, delicate cilantro and tangy lime juice.

DO I NEED TO USE WHITE RICE FOR CHIPOTLE CILANTRO LIME RICE?

With so many different personal food preferences, Chipotle Cilantro Lime Rice can easily be made using a variety of rices. If white rice isn’t your thing, feel free to substitute brown rice. If you prefer long grain rice, use that instead and cook following the manufacturers instructions. If basmati rice is your favorite, use that. There are no rules when it comes to this recipe for Chipotle Cilantro Lime Rice. We are just talking about food 🙂

HOW DO YOU MAKE CHIPOTLE CILANTRO LIME RICE?

I prefer to make my Chipotle Cilantro Lime Rice with Instant white rice so I am going to lay out the instructions based on that. If you substitute the rice for another variety, be sure to follow the manufacturers instructions for that particular rice.

To start the Chipotle Cilantro Lime Rice , add four cups of water to a large saucepan and bring to a boil. Add in four cups of instant white rice along with the bay leaves and stir, cover and remove from the heat.  Let sit 5 minutes. Remove cover and remove bay leaves. Add in butter, cilantro, lime and lemon juice and stir to combine. The End. Seriously, it’s just THAT easy to make Chipotle Cilantro Lime Rice.

Ingredients

  • 4 cup instant white rice
  • 4 cup water
  • 2 bay leaves
  • 3 tablespoons butter
  • 2 teaspoons salt
  • 1/3 cup fresh cilantro diced
  • 2 limes juiced
  • 1/2 lemon juiced

Instructions

  • Bring a large pot of water to boil. Add in instant rice and bay leaves. Stir, cover and remove from heat for 5 minutes
  • Remove cover and remove bay leaves. Stir in butter, salt, cilantro and juices from both lemon and limes. Serve immediately

    I cut back just a tad on the salt & butter. But this was truly a fantastic rice dish. It was enjoyed by all, and I’m sure will become a family regular. Thanks for a great rice dish.
