Grab fast food or have a REAL lunch? Like a delicious, made to order burrito bowl with rice and beans, chicken, pico de gallo, lime and corn salsa. The struggle is real, folks. Every. single. day.
Thankfully, this decision is a no brainer! This Slow Cooker Chicken Burrito Bowl is AMAZING and so much better than anything else you could grab for lunch.
With just a few minutes of prep work, this crock pot chicken burrito bowl is simmering away in the slow cooker and perfect for dinner or lunch leftovers.

Lets take a minute to go over what you will need to make these chicken and rice burrito bowls:
- Boneless chicken breasts
- Boneless chicken thighs
- Onion
- Jalapeno
- Can of corn
- Can of black beans
- Can of diced tomatoes
- Can of green chiles
- Minute brown rice
- Chicken stock
- Seasonings
- Cilantro
- Lime
- Tomato Sauce
- Garnishes like green onions, black olives, sour cream, shredded cheese, etc..
how do you make burritos in the crock pot?
To make this Slow Cooker Chicken and Rice Burrito Bowl, add chicken breasts and thighs, 1 cup chicken stock, tomato sauce, diced tomatoes (with juices) and spices to your slow cooker.
Stir to combine and cook on Low for for 3-4 hours or on High for 2 to 3 hours. Chicken is ready when can easily be pulled apart.
After the cook time has passed, remove the chicken and using two forks, shred into bite sized pieces.
Do not add the chicken back into slow cooker yet, just set it aside for now.
Adding to the existing liquid in the slow cooker, add 1 cup chicken stock, uncooked rice, drained black beans and corn, green chiles and diced jalapenos into the slow cooker.
Stir to combine and add chicken back to slow cooker.
Cook on High for 30-45 minutes.
Once rice is tender, stir in cilantro and juice of 2 limes.
Serve your Slow Cooker Burrito Bowls up as burrito bowls or in wraps topped off with cheese, avocado, green onions and sour cream, if you like.

are slow cooker burritos spice?
In my opinion, this chicken and rice burrito bowl is not too spicy.
It does have quite a bit of chili pepper in the seasoning but this recipe makes such a large amount, the you really don’t get any heat when the Slow Cooker Burrito Bowl is done cooking.
As a matter of fact, I usually add a bit more cayenne to the bowl when it is done.
Definitely go light with the spices if your family prefers their dishes mild.
do you need to use rice for these chicken burritos?
Not at all. You can swap the rice out for a variety of other choices with these slow cooker chicken burritos or omit it all together.
You could also use brown rice, quinoa or even barley or couscous.
I have not tried this burrito bowl using any of those substitutions but the cooking time should be close to the same, just keep you eye on it so that it doesn’t over cook.
can you freeze burrito bowls?
Yes!! To freeze your chicken burrito bowls, let cool completely and move your burrito bowls to a large zip top bag or freezer friendly container.
To reheat, let thaw in the refrigerator and heat over low on the stove top. You can also microwave for a few minutes or return to the slow cooker for a couple of hours on Low.
Add a bit of chicken stock to ensure it won’t dry out.

Ingredients
- 1 pound boneless chicken breasts
- 1 pound boneless chicken thighs
- 3 cups chicken stock divided
- 8 ounce favorite tomato or spaghetti sauce
- 1/2 large onion, diced
- 15 ounce can petite diced tomatoes
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 2 teaspoons cumin
- 2 teaspoons chili powder
- 1 teaspoon cayenne powder
- 2 teaspoons smoked paprika
- 2 teaspoons salt
- 2 teaspoons black pepper
- 15 ounce can black beans drained and rinsed
- 15 ounce can corn drained
- 3 cups uncooked, instant rice
- 4 ounce can green chiles
- 2 large jalapenos diced - stem, seeds, ribs removed
- 2 limes juiced (plus more for squeezing)
- 1/4 cup cilantro chopped
- tortilla wrap and garnishes (optional)
