Willpower is often an elusive little minx, isn’t she? Her and I often do not play well together, especially at lunchtime. Contrary to popular belief, I do not have the privilege to lounge around in my leopard print jammies and drink Pina Colada’s all day while entertaining myself poolside. (sigh!…) So let’s talk about why we both (you and me!) need this Slow Cooker Burrito Bowl in our lives.
Like so many of us, This Girl has a 40 hour a week Monday through Friday J.O.B. and even though I think I might be able to get away with the tropical fruity drinks, I guarantee somebody would eventually take notice of the purple leopard print. So in my cubicle I sit and as lunchtime rolls around my good intentions and willpower begin to fight the good fight between choosing my healthy, low carb, low fat, low calorie meal supplement chocolate shake OR I could just jump in my truck and drive 10 minutes down the road and have a REAL lunch.. a delicious, made to order burrito bowl with rice and beans, pork, pico de gallo, lime and corn salsa. The struggle is real, folks. Every. single. day.
Now most days I’m a good girl and sit in my break-room with my friends, scrolling though Pinterest (#devilsplayground) and sipping on my shake. Don’t get me wrong, I actually really like my shakes and as long as I don’t think too hard about it, I am completely happy making the healthier choice. Unless it’s Friday. That’s a done deal. I am not responsible at all for my actions on Fridays.
So, while my love for burrito bowls keeps me on my toes during the week, I started thinking about how easy it would be to make them at home and what a great one pot, Slow Cooker Burrito Bowl meal it could be. Fall is in the air and the weather is starting to change .. well, not here in Florida but elsewhere I hear it is.. and what could be more perfect than pouring everything into your slow cooker before leaving for your busy day, only to come home to a delicious Slow Cooker Burrito Bowl dinner already done and waiting for you?
Um. Nothing!
IS THIS SLOW COOKER BURRITO BOWL SPICY?
No, this Slow Cooker Burrito Bowl is not too spicy. It does have quite a bit of chili pepper in the seasoning but this recipe makes such a large amount, the you really don’t get any heat when the Slow Cooker Burrito Bowl is done cooking. As a matter of fact, I usually add a bit more cayenne to the bowl when it is done.
DO YOU NEED TO USE BROWN RICE FOR THIS SLOW COOKER BURRITO BOWL?
Not at all. You can swap the brown rice out for a variety of other choices. You could use white rice, quinoa or even barley or couscous. I have not tried this Slow Cooker Burrito Bowl using any of those substitutions but the cooking time should be close to the same, just keep you eye on it so that it doesn’t over cook.
HOW DO YOU MAKE THIS SLOW COOKER BURRITO BOWL?
Easy! To make this Slow Cooker Burrito Bowl, add chicken breasts, chicken stock and spices to your slow cooker and cook on High for 4 hours or on High for 6 hours if you are like me and you are grabbing chicken from the freezer.
After the cook tim has passed, remove the chicken and using two forks, shred into bite sized pieces. Do not add the chickent back into slow cooker yet, just set it aside for now.
Adding to the existing liquid in the slow cooker, add 1.5 cups of water or chicken stock, uncooked brown rice, black beans, jalapenos, tomatoes and corn into the slow cooker and cook on High for 30 minutes.
Add chicken back into rice mixture along with the juice of two limes, cilantro and green onions and cook for another 10 minutes.
Serve your Slow Cooker Burrito Bowls up as burrito bowls or in wraps topped off with cheese and sourcream, if you like.

Slow Cooker Burrito Bowl
Ingredients
- 3 chicken breasts
- 5 1/2 cups chicken stock divided
- 3 teaspoons onion powder
- 3 teaspoons garlic powder
- 2 teaspoons cumin
- 3 teaspoons chili powder
- 1 teaspoon cayenne powder
- 2 teaspoons smoked paprika
- 2 teaspoons salt
- 2 teaspoons black pepper
- 15 ounce can black beans drained and rinsed
- 15 ounce can corn drained
- 15 oz can petite diced tomatoes drained
- 4 cups Instant Minute brown rice
- 2 large jalapenos diced - stem, seeds, ribs removed
- 2 limes juiced (plus more for squeezing)
- 1/2 cup cilantro chopped
- 6 green onions diced
- tortilla wraps, cheese and sour cream (optional)
