Grilled Spicy Orange Chicken legs

Is there any one particular food that represents the good times of summer as completely as barbecue chicken? In case anyone is wondering the answer to that question is NO! The only thing that could possible make it better would be to kick that BBQ chicken up a notch with my recipe for Grilled Spicy Orange Chicken… BOOM!

There is nothing better than barbecue chicken at the end of a long hot day playing in the sun with your friends and family. That being said and as I have discussed before,  I do not use my grill. Please don’t judge, I just can’t bring myself to ignite a fire ball and risk setting my entire house on fire. I’m funny that way. But if YOU are a brave person and actually use your grill, you Grilling Machine, feel free to use this Grilled Spicy Orange Chicken recipe and be the star of your backyard grilling kingdom. Me? Not so much… but thank goodness my husband is!!!

WHAT IS GOOD WITH BARBECUE CHICKEN?

A shorter answer is what DOESN’T go with barbecue chicken?  Mashed potatoes, potato salad, roasted veggies, pasta salad, cornbread, coleslaw, beans, corn salsa.. every summer side dish you can think of goes with barbecue chicken.

CAN I MAKE BARBECUE CHICKEN IN THE OVEN?

Yes, you can make barbecue chicken in the oven. Rinse and pat dry chicken pieces and then season all sides with salt.  Preheat oven to 400 degrees and heat 3 tablespoons of vegetable oil over high heat in large skillet. Add chicken pieces to oil and cook for 3-4 minutes on each side until skin browns.. don’t crowd your pan, this may take two batches. Move browned chicken pieces to a large foil lined baking pan with baking racks so that the air can circulate around the chicken. Using a basting brush, coat all sides of the chicken pieces with BBQ sauce and bake for 15 minutes. Remove chicken and coat all sides again with BBQ sauce.. return to oven and bake for 40-45 minutes. Remove from oven, coat chicken again with remaining BBQ sauce and let sit for 15 minutes
Serve immediately

HOW DO YOU MAKE GRILLED SPICY ORANGE CHICKEN?

Easy! To make Grilled Spicy Orange Chicken, start by making your sauce in a medium sized sauce pan, add olive oil and heat over medium heat.  Add diced jalapeno and saute for 2 minutes. Add in garlic and cook for another minute. Pour in ketchup, marmalade, vinegar, soy sauce, orange juice and remaining spices and bring to a low boil and then lower heat and simmer for 20 minutes.  Pour BBQ sauce through a small screen strainer to remove jalapeno and garlic pieces (or don’t if they don’t bother you) and then allow sauce to come to room temperature.

For the chicken, rinse and pat dry chicken pieces and then season all sides with salt. Heat your grill to medium hot and start your larger chicken in the middle of the grill with the smaller pieces more on the outside, flipping your larger pieces after 5 minutes and then after another 5 minutes, move the chicken to the outer edge of the grill.  Cover with lid and let cook for another 10 minutes per side and then check for doneness.  The safe internal temperature for cooked chicken is 165°. Put 1/2 of the Spicy Orange BBQ sauce in a small bowl, for drizzling and serving and set aside. Baste your chicken with the remaining Spicy Orange Barbecue Sauce and let grill for another 5 minutes. Move the Grilled Orange Chicken to a serving dish and baste again with the reserved BBQ sauce.

This recipe for Grilled Spicy Orange Chicken is the epitome of spicy summer goodness. The tanginess of the orange against the spicy of the peppers makes this the perfect combination to celebrate this time of season. And let’s not forget Father’s Day is right around the corner. Believe me, he will love this new Grilled Spicy Orange Chicken twist on his favorite classic man-food. And if you aren’t a spicy food lover, cut back on the peppers. If you like your food to incinerate your soul and scald your mouth, go ahead and kick it up another notch. As I have this recipe written, it’s somewhat middle-of-the-road. But you can always tweak it to what works best for your family.

Ingredients

  • 1 each whole chicken, cut up

Spicy Orange BBQ Sauce

  • 1/2 tbsp olive oil
  • 2 cloves garlic diced
  • 3/4 cup ketchup
  • 2 each jalapeno diced
  • 1/8 cup apple cider vinegar
  • 1/2 tsp ancho pepper powder
  • 1/4 tsp cayenne pepper powder
  • 1/2 cup orange juice
  • 1/ tsp onion powder
  • 18 oz orange marmalade
  • 1/4 tsp salt
  • 2 tbsp soy sauce

Instructions

To Make The Spicy Orange BBQ Sauce

  • Heat your grill to medium hot and start your larger chicken in the middle of the grill with the smaller pieces more on the outside, flipping your larger pieces after 5 minutes and then after another 5 minutes, move the chicken to the outer edge of the grill. Cover with lid and let cook for another 10 minutes per side and then check for doneness. The safe internal temperature for cooked chicken is 165°.
  • Put 1/2 of the Spicy Orange BBQ sauce in a small bowl, for drizzling and serving and set aside.

Notes

This BBQ can be made ahead and stored in the refrigerator.  Heat for 1 minute on High in the microwave before using.. stir to loosen the sauce, it will get very thick when refrigerated because of the marmalade.
