Roasted Rainbow Carrots are my new food addiction. As someone who would rather eat pizza than vegetables any day of the week, to be able to say that my favorite way to eat carrots has been updated to this new recipe for Roasted Rainbow Carrots, is a huge step…. HUGE!!

WHY SHOULD I ROAST MY RAINBOW CARROTS?

Easy answer on this one, you should roast your rainbow carrots because it brings out that carrot flavor.  I don’t know about you but I have had carrots served to me before that just taste BLAH! Not these Roasted Rainbow Carrots!!  The carrot flavor is more pronounced when you roast the vegetables and let’s be honest, the char marks are cool!

HOW DO I GET COOL CHAR MARKS ON MY RAINBOW CARROTS?

There are two ways you can easily roast your Roasted Rainbow Carrots.  First, you can simply add them to a hot barbecue grill.  This method makes them perfect to serve up at your summer barbecues and what a door opener THAT is!! How impressed will your friends be when you whip out the rainbow carrots on the grill and serve up a veggie that usually doesn’t see the light of day when it comes to outdoor parties and get togethers?  The second way to roast your Roasted Rainbow Carrots is in your oven.  Simply place the rainbow carrots on your oven rack under the broiler for a few minutes a side and they will roast up nicely.

HOW DO I MAKE ROASTED RAINBOW CARROTS?

Start your Roasted Rainbow Carrots by washing your carrots and trimming off the green foliage, if still attached. Coat liberally with vegetable oil and place on a hot barbecue grill for approximately 15 minutes, turning your carrots continuously to prevent them from getting too scorched. Once the Roasted Rainbow Carrots have the grill marks you desire, drizzle your Roasted Rainbow Carrots with honey and lightly salt.  Serve immediately.

If you are using the oven roasted method, wash and trim the foliage from the carrots, coat with vegetable oil and spread carrots out on a baking pan. Move oven rack to just 4-5 inches under your pre-heated broiler and place pan on the rack.  Broil for 4-5 minutes and then rotate your carrots.  Continue to broil and rotate every 5 minutes until your Roasted Rainbow Carrots are charred and cooked through.  This should only take about 15-20 minutes, depending on the size of your carrots.  Remove from the oven, salt lightly and drizzle with honey. Serve immediately.

HELPFUL TIPS

  • Looking for a way to spice up your Roasted Rainbow Carrots?  Sprinkle on some cayenne powder when you drizzle on the honey.  It’s the perfect combination of sweet heat!
  • Roasted Rainbow Carrots can be made with any of your favorite carrot varieties.  For this post, I found these lovely rainbow carrots but use whatever is your favorite kind.
  • If you are looking for rainbow colored carrots to make this Roasted Rainbow Carrots recipe and you are unable to find them, check your farmers market or a local organic market.  They seem to carry rainbow carrots more often than big chain grocery stores.

Ingredients

  • 12-15 carrots washed and trimmed

    Your carrots are beautiful!! I love the different colors and the char marks really give them that fresh just off the grill look. We do love adding honey to them! When we roast carrots we also add some heat to them — the spicy honey taste is irresistible.

    The rainbow carrots are just so good for this recipe. It looks so colourful and sounds really tasty. I often have roasted carrots at the moment as my little boy loves them. He also loves honey so this recipe should be a big hit!

    Heather, I just love the selection of carrots you have here!!!
    Rainbow carrots are so much more interesting than just orange ones!
    BUT, I am going to make this with orange carrots, because…..YUM!!!!!
    Then next week after I have been to the farmers market I can make it again with the rainbow carrots they sell there.

    Oh my gosh, those carrots are SO PRETTY! I wish I could get my hands on multi colored carrots like this all year round. I recently read in a book called Eating on the Wild Side (great book!) that the purple carrots are the healthiest in terms of nutritional content. So interesting! Can’t wait to try your recipe! Pinning for later. 🙂

    Yum. For some reason, I think that the different colored carrots taste better than the orange ones. I know it’s all in my mind since they all taste basically the same, but I adore the different colors. Your recipe looks easy and delicious!!

    I love using the rainbow carrots that you used in this recipe. They are so pretty. I love how roasting brings out the natural sweetness in carrots. Adding a touch of honey takes them over the top with sweetness. I love the idea of adding a touch of cayenne for some flavor contrast.

    Those colourful carrots are so nice. I try to find them, especially for the holiday table. I even find a slight difference of taste between the colours. Honey is a great addition since roasted carrots are sweet as is. This is a great side dish for any recipe.
