Made with leftover rotisserie chicken and a packet of your favorite taco seasoning, these homemade chicken quesadillas will be your new favorite go-to, easy dinner recipe.

These easy chicken quesadillas are all of that and then some. This is honestly the easiest, tastiest dinner idea and it’s perfect for busy weeknights and lazy weekends.

To make these Cheesy Taco Chicken Quesadillas, you will need:

  • Large flour tortillas
  • Butter or Vegetable oil
  • Rotisserie Chicken
  • Water or chicken stock
  • Taco Seasoning Packet
  • Shredded Cheese
  • Chopped onions

How To Make Cheesy Chicken Quesadillas

Start by adding the shredded rotisserie chicken to a large skillet and heat over medium-high heat. 

Add the taco seasoning to the chicken, along with 1/3 cup of water or chicken stock and chopped onions.

Stir to combine and continue to cook for 3-4 minutes or until most of liquid is gone.

Next, heat oil or butter in a large skillet or griddle over medium-high heat.

Add a generous sprinkling of cheese to one of the tortillas.

Then add taco chicken on top, lightly moving the chicken around to create an even layer, completely covering the entire tortilla.

Add another layer of cheese on top of the chicken layer, then add another tortilla on top.

Gently move your uncooked quesadilla to the skillet or griddle.

Set a large plate or something heavy on top of your quesadilla as it cooks.

Let cook for 2-3 minutes. Remove the plate and make sure your bottom tortilla is lightly browned and crispy.

Using a spatula, quickly (gently!) flip your quesadilla, add the plate again and let continue to cook until that side is also lightly browned and crispy.

Once your edges are crispy and your cheese is melted, remove your quesadilla, cut into wedges and serve with your favorite toppings.

  • Don’t have rotisserie chicken on hand? Grab two chicken breasts and roast or boil them until cooked. Shred chicken and follow recipe instructions. You will need approximately 2 cups of chicken.
  • Adding the plate or pot to the taco chicken quesadilla while it cooks helps smash the quesadilla down and helps it cook quickly and evenly.
  • Chicken quesadillas are as basic or dressed up as you want to make them.
  • These are perfect served up with a dollop of sour cream, guacamole or homemade salsa.
  • Use a pizza cutter to make cutting your chicken quesadillas easy.
  • I like to cook mine on a large griddle. This allows me to cook more than one quesadilla at a time.
  • Looking to make smaller portions? Instead of using two tortillas, load up one and fold it in half before cooking it.

You can use flour tortillas or corn tortillas, gluten free tortillas, low carb tortillas or even flavored tortillas. It’s really whatever you and your family prefer.

Again, choosing the perfect cheese for your quesadillas is 100% personal preference. You want to pick a cheese that has a great flavor and melts well.

I would suggest a cheese like cheddar cheese, Monterey Jack, Pepper jack cheese. Other suggestions would be queso asadero or oaxaca cheese for a more Mexican vibe.

Feel free to try a mix of any of these cheeses for amazing chicken quesadillas.

When it comes to what to put in a quesadilla, the possibilities are endless.  

  • Chicken, ground beef, steak or ground turkey
  • White, red or green onions
  • Chopped jalapenos
  • Black olives
  • Red, green, yellow or red peppers
  • Chopped tomatoes
  • Sliced mushrooms
  • Black beans and corn
  • Cilantro

Making Ahead and Leftovers

Storing: Any leftover taco quesadillas can be stored in an airtight container or zip top bag in the refrigerator for 3-4 days.

Reheating: Soggy chicken quesadillas are a big no-no so don’t just through these leftover quesadillas in the microwave.

Reheat in a large non-stick pan over medium heat. Cook for 1-2 minutes on each side until your tortillas are crispy again and your fillings are warmed though.

Make ahead taco chicken quesadillas: Follow the recipe as instructed up to the point of cooking the quesadilla.

Instead, move the quesadillas to a cookie sheet and flash freeze them in the freezer until firm. Transfer to a freezer friendly airtight container or large zip top bag and freeze up to 3 months. 

To heat, place the frozen chicken quesadillas in the microwave for 1 minutes before following the reheating instructions above.
