Oh those days!! You know the ones I am taking about.. the days where nothing goes right from the moment your wake up to the end of the day when you are asked the eternal question of ‘What’s for dinner?’ (#feedyourself) … one of THOSE days! The answer? Five Ingredient Baked Tortellini Casserole!
Welcome to my Wednesday. I don’t particularly dislike Wednesday, it’s normally a fine day in itself even if it is the ‘Jan Brady’ of the week. Wednesday is not Monday so it is lacking the authority as the start of the work week, the special day we all
dread look forward to and it’s not Friday, which of course is the finish line when it comes to the 9 to 5 adult-type responsibilities and expectations. Nope, Wednesday sits squarely in the middle of the week, keeping the Mondays and Friday life in balance with it’s non-confrontational vanilla type existence.
Until THIS Wednesday. THIS Wednesday flew off the crazy train and wrecked havoc from start to finish. Let’s start at 6:42 a.m., when instead of being woken up by my alarm clock I was rudely awoken by the sound of (some??) dog vomiting in some close proximity to my being and let me tell you, there is no alarm clock in the WORLD that will get you up and moving like that particular sound. Now comes locating of pile of …. wow!…. WHATEVER that was…., comforting the furbaby offender who at the age of 3 years old still cant grasp the idea of not eating her doggie toys but to simply play with her toys instead and then start the inevitable and necessary clean up of (bleck!!!!!!!!) … WHATEVER .. just came out of that dog.
All before 6:53 a.m.
I will save you the extended version of the rest of my day from there but the remaining highlights include spilling my morning coffee all over my desk, forgetting my cell phone at home (aka Life Support), realizing while in line at the grocery store that I left my wallet at home on the dining room table (thank you for hidden cash in the side pocket of my purse) and finally arriving home to another pile of (bleck!!!!) however, this time the pile was contained to the large dog cage the baby is kept in during the day so now it is not only on the puppy blankets and pillows but also now all over HER, as well. This was realized a second too late as little 3 year old puppy… so excited to see her momma!!!… that she jumped up and shared the biological love all over me.
At that point, you just need to laugh. Sure, it’s easy to get mad or be in a bad mood and start wrecking your own brand of havoc through the house but honestly, what good will that do? At least that is what I told myself when I was asked what I was making for dinner, not 15 minutes later.
It’s not my husbands fault, he had no idea how bad of a day I had and it would have been unfair to simply pick up my car keys, walk out the door and jump a plane to Hawaii … right? … right??
Instead, he listened to my tales of woe and offered to call for take out, because he’s awesome like that. Instead, I had already picked up what I needed to throw together a fast, delicious new idea and let me tell you, this recipe for Five Ingredient Baked Tortellini Casserole is a lifesaver! Thirty minutes and you are done. Hot, hearty, delicious and only five ingredients. A bad day can’t even compete!

Five Ingredient Baked Tortellini Casserole
- 2 19 oz bag frozen tortellini
- 2 24 oz jars favorite spaghetti sauce
- 15 oz jar Alfredo sauce
- 2 cups shredded mozzarella cheese
- 12 - 15 oz fresh Italian sausage links (3 or 4 links)
- Preheat oven to 350 degrees and set large pot of water to boil
- In a large skillet, brown Italian sausage for 5-7 minutes over medium high heat
- Remove sausage from skillet and cut into bite sized pieces, turn down heat to medium, wipe grease out of skillet and pour in spaghetti and Alfredo sauce. Add in sliced sausage and stir to combine
- Once water is boiling, pour in tortellini and cook for 2-3 minutes.. drain water when done
- Pour tortellini into the sauce mixture and stir. Transfer to a 9 x 13 pan and cover with shredded cheese
- Bake for 20 minutes, increasing temperature to broiling for last 5 minutes to brown cheese
- Remove from oven and serve immediately
