You know those days where nothing goes right from the moment your wake up to the end of the day when people start asking you “What’s for dinner?” The easy answer to that question has to be Baked Tortellini Casserole!
Wednesday sucked. Forgot my phone at home, sick puppy practicing her own kind of biological warfare, left debit card on my desk when I went to the store, spilled coffee.. Hello, Wednesday!
So when it came to dinner, I needed a fast dinner idea that was going be at least one thing that wouldn’t go wrong.
Five ingredients? Check! Fast 30 minute meal? Check! Check! Hot, hearty and the ultimate pasta comfort food? Yessssssss!!!
WHY THIS TORTELLINI CASSEROLE IS THE BEST
Baked Tortellini Casserole is an easy dinner recipe that the whole family will love! This is my favorite dump-and-bake recipe. The only thing you need to cook is the Italian sausage, everything else cooks in the oven.

To make this Baked Tortellini Casserole, you will need:
- Frozen tortellini
- Jar of spaghetti sauce
- Jar of Alfredo sauce
- Italian Sausage links
- Mozzarella cheese
Seriously, this tortellini casserole couldn’t be easier to make because you are grabbing a bag of frozen cheese tortellini and there is no need to mess with boiling water and cooking the cheese-filled pasta beforehand. #winning
HOW TO MAKE BAKED TORTELLINI CASSEROLE
Preheat oven to 400 degrees and spray a 9×13 baking pan with non-stick spray.
In a large skillet, brown Italian sausage for 5 to 7 minutes over medium high heat.
Remove sausage from skillet and cut into bite sized pieces, turn down heat to medium, wipe grease out of skillet and pour in spaghetti and Alfredo sauce. Add in sliced sausage and stir to combine.
Pour tortellini into the sauce mixture and stir. Add half of the tortellini mixture into the baking pan and cover with one-third of the shredded cheese. Add remaining tortellini and sprinkle with remaining shredded cheese.
Spray a sheet of aluminum foil with non-stick spray and lay the oil-side down and lightly cover your casserole. Bake 40 minutes then uncover and bake another 10 minutes or until cheese turns bubbly and golden.
Serve with some garlic bread and a nice crisp, green salad.
FROZEN CHEESE TORTELLINI
My favorite reason this Baked Tortellini Casserole is such a must have easy dinner recipe is that it’s so easy to bring together. No need to boil the frozen cheese-filled tortellini first.
Most grocery stores have frozen cheese tortellini in their freezer section and if you can’t find tortellini, this easy dump and bake casserole ideas can also be made using frozen ravioli instead.
PRO TIPS FOR BAKED TORTELLINI CASSEROLE
- Not a fan of Italian sausage? Leave it out or substitute the sausage with ground beef.
- This tortellini casserole will keep in the fridge for about five days. Reheat individual portions in the microwave for about 2 minutes or until warmed through.
- Cooking just for two? Cut the ingredients in half and prepare the casserole as instructed in an 8-inch square pan. Or make the whole thing and freeze any leftovers for another night.
- You can prep easy dinner in advance and freeze it until you’re ready to bake it! To do so, in a freezer friendly baking pan, simply follow the recipe instructions up until where you would bake it. Instead, cover tightly with foil and freeze. To bake, remove from freezer and bake as instructed, adding on an additional 15 minutes or until warmed through.

My husband hosts a men’s night at our church each month and I made this for their meal. Everyone loved it! It was so simple with a nice rich taste. I added a Caesar salad and bread, perfect meal! Will definitely be making again!

Fantastic dish! I’m not very experienced when it comes to trying new recipes so it takes me a few tries before I nail it. This was a great and easy dish the only downside is I got too confident with my cheese and now it’s just a giant cheesy heart attack in a pan! ???? great dish though!

I’m making this today for my family. I have a couple of questions. Could the tortellini be refrigerated instead of frozen? Would that change the cook time?

Hi Bethanee!! I LOVE this dish .. it’s so super easy to make 🙂 If your tortellini is not frozen, don’t worry about it. Just skip the step where you boil off the frozen tortellini and just add your tortellini as is into the recipe. I did mine with the cheese filled ravioli but I know they have different flavors (chicken, mushroom, etc..) so it would fun to experiment with those too 🙂 I hope you love this dish as much as I do and please let me know how it turns out..
