Loaded Sheet Pan Beef Nachos are a quick and easy way to feed a hungry crowd and perfect Game Day food. Sheet pan nachos loaded with melted cheese, jalapenos, black beans, red onions, tomatoes and jalapeno sour cream and oven baked to perfection.

Three things to know about me when it comes to eating beef nachos..

  1. Self appointed nacho snob.
  2. I do not care about how many calories or fat grams I am eating when it comes to a good plate of nachos.
  3. I will not eat olives on my nachos for anyone.. not even you!

When it comes to nachos, I am usually disappointed. Unless it’s Margaritaville nachos.. those are a gift from Heaven!

By anywhere else, I have big hopes, big dreams for the perfect order of nachos whenever I order beef nachos out in a restaurant.

The menu teases and makes promises of crispy chips lovingly slathered in layers of seasoned beef, melted cheese, sometimes chili, onions, beans and sour cream.

My mouth drools, my anticipation builds, I start being snappy to my husband because it’s taking too long for those promised bites of nacho happiness to arrive at my table!!!

Then my mountain of nachos supreme are delivered … and I am sad.

The top layer is almost always good but one you start traveling inwards, the toppings are sporadic and the even distribution of cheese is half-hearted.

If there is chili involved, there is mucho sogginess.

Then we get into the toppings themselves. I h-a-t-e olives and my hubby is not a fan of tomato.

That means at least one of us is going to be unhappy. You simply cannot ‘half’ a topping order of anything when it comes to nachos.

Remember when you were a kid and your mom told you to pick off (insert offending item HERE) your pizza.. that you would never taste it??

Lies!

Same goes for nachos!! You can’t uneat an olive if it is hidden under nacho cheese.

So what is a self appointed nacho snob to do?

Easy!!! You learn to make the BEST Sheet Pan Beef Nachos and never order sub-par nachos ever again!

  • Sheet pan nachos are the BEST!! Your beef nachos are laid out in a single layer so you have maximum toppings on every chip.
  • Everyone gets to enjoy their favorite nacho toppings. No more having to leave a topping off or suffer through one you don’t like.
  • These sheet pan nachos are LOADED with so many toppings and so much flavor!
  • All calories and fat grams are cancelled out when eating bombdiggity homemade nachos. That’s a real thing…. honest!

To make these Sheet Pan Beef Nachos, you will need:

  • Ground beef
  • Garlic powder and onion powder
  • Taco seasoning
  • Tortilla chips
  • Melted nacho cheese – store bought or homemade
  • Jalapenos – jar and/or fresh
  • Red onions – fresh or pickled red onions
  • Black olives
  • Black beans
  • Tomato
  • Shredded cheese
  • Sour cream

Start by preheating oven to 400 degrees and lightly spraying a large baking pan with non-stick spray. Set aside.

In a large skillet, brown ground beef until no longer pink, about 4-5 minutes. Drain grease and return beef to the pan.

Add in taco seasoning, garlic powder and onion powder along with a dash of salt and 1/3 cup of water. Stir to combine and cook for 2-3 minutes.

Lay tortilla chips out in an even and singular layer on the baking tray.

Top chips with the ground beef, then a layer of nacho cheese sauce.

Add a layer of black beans then sliced jar jalapenos, olives, diced tomato, red onions.

Top off nachos with shredded cheese and fresh sliced jalapeno.

Bake for 5-10 minutes or until cheese has melted.

Serve topped with sour cream, salsa or jalapeno sour cream (quick recipe below).

pro tips for perfect sheet pan nachos

  • I use a 15×10 jelly roll pan to make my sheet pan nachos. A jelly roll pan is larger than a standard 13×9 pan so there is more room for nacho-y goodness. You can find them online or in your local big box store.
  • Don’t like an ingredient in this nacho recipe? Leave it off! Want to add something else? Go for it!!
  • I am apologetically double dipping in the cheese category for these sheet pan nachos. I love using the melted nacho cheese and the shredded cheese for the best of both worlds.
  • Like me and hate your significant others favorite topping? Do what I do and make half a pan your way, half theirs. All is fair in love and nachos. 
  • Grab a packet of your favorite taco seasoning or if you really want to kick things up, grab a packet of Hot and Spicy taco seasoning if your store carries it.
  • Want to switch up your beef nachos? Substitute the beef with ground pork, ground chicken or shredded chicken.
  • If you want, reserve a small portion of your onions, beans and olives to sprinkle on top of your oven baked nachos, to make them pretty 🙂 Top and pop back in the oven for 1-2 minutes before serving.

nacho cheese sauce

Grab a jar of your favorite nacho cheese sauce from the chip aisle of your local grocery store or make your own.

To make your own nacho cheese sauce, add 8 ounces of processed cheese (you know.. the ‘brick’) to a small sauce pan with 2-3 tablespoons of milk. Melt over medium high heat, stirring often.

I use both store bought jar sliced jalapenos and fresh jalapenos in this sheet pan nacho recipe. To make Jalapeno Sour Cream, simply add 1 cup sour cream to a medium sized bowl.

Add in 2-3 tablespoons of the jarred jalapeno brine to your sour cream and stir to combine.

Your Jalapeno Sour Cream will be looser than regular sour cream and perfect for spoon drizzling over you oven baked nachos.

pickled red onions

Feel free to use sweet onions or fresh red onions for this baked nacho recipe. For mine, I use pickled red onions for a bit of extra zip and tang.

That is also why they are a lighter color in the pictures.

Ingredients

  • 1 pound ground beef
  • 1 ounce packet of taco seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/3 cup water
  • 16 ounce bag of tortilla chips

  • 3 ounces sliced jalapeno, jarred
  • 15 ounces black beans, rinsed
  • 1 pint cherry tomatoes, quartered
  • 1/3 cup red onions, diced or pickled
  • 3 cups shredded cheese
  • 1 jalapeno, thin sliced
  • 1 cup sour cream

Instructions
