Purple Sweet Potato Fries
As I have previously discussed in Purple Potato Mash Up, I have a huge affection for all things purple. Now, not only are there purple new potatoes growing in this big, beautiful universe but I find out there are purple sweet potatoes, as well. Can I tell you that my day couldn’t get any better if it tried … minus winning the lottery and miraculously waking up 50 lbs lighter. Those two things could probably compete but even then, I’ll be grabbing up my purple sweet potatoes and bringing them with me as I head up to collect my billion dollar check. True story.
I do not have to even go on about how healthy sweet potatoes are as we all know that they are an excellent source of iron, Vitamin C, B6 and D and even potassium. They are versatile and Lord knows we would need to cancel Thanksgiving if there was ever a shortage of them and I even heard today that the purple ones are rich in antioxidants and promote higher testosterone. Is there a bad thing to be said about sweet potatoes? Nope, I didn’t think so either.
Purple Sweet Potato Fries
You will need:
4-5 large purple sweet potatoes
2 tbl cornstarch
3 tbl olive oil
2 tsp salt
2 tsp creole seasoning or cayenne powder
honey for drizzling
Preheat your oven to 425 degrees. Peel and slice your potatoes into fry shaped pieces or wedges, whichever you prefer.
Add the potato fries into a large bowl and sprinkle on the cornstarch. Mix well with your hands. Next, pour in the olive oil and spices and mix again well with your hands. Continue mixing until each fry has been coated. Spread your fries on a baking sheet and bake for 13 minutes. Remove and flip the fries so that they can cook evenly on both sides. Return them to the oven and bake them for another 15-17 minutes. Remove from the oven and drizzle honey over the fries.
That’s how easy it is to make a healthy, delicious alternative to the frozen french fries in a bag. Plus they are PURPLE so yes, you are THAT awesome!!

Myra, I’m so sorry for getting back to you so late … Frying it should only make it better 🙂 … The baked fries were SOO good but we all know fried fries are best .. You should end up with a crisp outside and a soft, yummy inside..
If I had to eat this I would be mesmerized by the pretty purple and forget to start munching away 🙁
