Let’s take a minute to talk about fruit pizza, red white and blue fruit pizza and more specifically, Fourth of July Fruit Pizza.

One of my favorite go-to comfort foods in this life has to be an extra cheese pizza from my neighborhood pizza joint.  Unfortunately, pizza is not exactly figure friendly.. or so my jeans tell me.

Imagine my (ridiculous!) level of happiness to find that there are actually healthy pizza options that do not taste like cardboard or the floor of your car.

Wh….?  Wait, what???  Fruit pizza?  What the heck is a fruit pizza and since the word ‘fruit’ is in the title…. um …. does this make it a healthy fruit pizza???

Word.

Summer is hot and nasty down here in Florida!

When it’s time to get together with friends and family for a Memorial Day BBQs or Fourth of July celebration, no one wants to be loading up on heavy foods in 106 degree weather.

Trust me when I say this Red White and Blue Fruit Pizza is going to be your new favorite July 4th dessert.

What is a Dessert Pizza?

Just like it’s savory counterpart, dessert pizza has all of the usual components such as a crust, ‘sauce’ and toppings.

The only difference is that on this dessert pizza, you have a jumbo chewy sugar cookie crust, a sweet and tangy sauce and the toppings are fresh fruit.

To make this Red White and Blue Fruit Pizza, you will need:

Roll of refrigerated Pillsbury Sugar Cookie Dough

  • Cream Cheese
  • Butter
  • Powdered Sugar
  • Milk
  • Vanilla Extract
  • Lime
  • Blueberries
  • Strawberries
  • Raspberries

Made with a Pillsbury sugar cookie crust, fresh fruit, powdered sugar, lime and cream cheese, this Red White and Blue Fruit Pizza is the perfect patriotic dessert to show off your Ameican pride!

How to Make a Patriotic Fruit Pizza

This one moves fast so keep up 🙂  To make this Red White and Blue Fruit Pizza, preheat your oven to 350 degrees and then let’s start with your Pillsbury sugar cookie crust. 

Spray a bit of non-stick spray on a 12″ pizza pan.

Add a sheet of parchment paper traced to fit the pizza pan shape and then spray the parchment paper with more of the non-stick spray. 

The spray on the bottom keeps your parchment paper from sliding around too much while you prepare the crust and the spray on top keeps the sugar cookie crust from sticking.

Open up your roll of sugar cookie dough and start tearing off chunks of the raw cookie dough (don’t eat any!) and dropping them on the pan until you have it all broken up.

Using your hands, lightly and evenly press the cookie dough into the pan to make the crust.

Bake for 12-14 minutes until lightly browned, remove and set aside to cool completely. 

While your crust is cooling, make your cream cheese frosting.  Add cream cheese in a large mixing bowl with the room temperature butter and cream until smooth and fluffy. 

Add in sifted powdered sugar, a dash of salt, vanilla extract and the zest of one lime. 

Mix together until well incorporated and then move the refrigerator while your crust continues to cool.

Once your sugar cookie crust has cooled completely, spread your cream cheese frosting over your crust and then decorate with fresh blueberries, strawberries and raspberries.

Pro Tips for Perfect Fruit Pizza

  • Don’t forget to spray your parchment paper with nonstick cooking spray. This guarantees your sugar cookie crust will be perfect!
  • Be sure to rinse and completely dry your fresh fruit. Drying your fruit helps your fruit anchor down into your cream cheese base.
  • Cut your fruit approximately 1/8 of an inch thick.
  • Be sure to have enough fresh fruit on hand in case you run into pieces that are not ripe or past their prime.
  • Use any combination of fruit YOU like. This patriotic fruit pizza was done as an easy red, white and blue dessert idea but you can switch it up.
  • No joke, a pizza cutter is perfect for slicing up your dessert pizza.

Am I over-exaggerating when I say this is the greatest patriotic dessert pizza the world has ever seen?… meh … maybe? 

OR MAYBE NOT!!!! 

When I say you are bringing the very best summer party dessert every time, I am not even joking!

Lime cream cheese slathered all over that chewy sugar cookie crust and then topped with blueberries, strawberries and raspberries… be still my heart !!! 

This is the part where I have to say that I think fresh raspberries are jerks (#assholes) and that is why I only have a tiny little circle of them on this Red White and Blue Fruit Pizza. 

I don’t care when I buy them, where I buy them, how carefully I inspect the carton, how fast I drive home from buying them… every time I buy fresh raspberries, I get like 9 of them that are not icky and gross. 

I really don’t like fresh raspberries for that reason and I just can’t understand why we can’t be friends.

Making Dessert Pizza In Advance

This Fourth of July Fruit Pizza is also super easy to prepare a day in advance. 

The day before you need it, cook the crust, let it cool and then keep it covered at room temperature and then mix up the cream cheese frosting and keep that covered in the refrigerator.

The next day assemble your fruit pizza knowing you have most of your work already done for you 🙂

Ingredients

  • 16.5 ounce roll of refrigerated Pillsbury sugar cookie dough
  • 6 ounces cream cheese .. room temperature
  • 2 tablespoons butter .. room temperature
  • 1-1/2 cups sifted powdered sugar
  • 1-2 tablespoons whole milk
  • 1 teaspoon vanilla
  • 1 lime .. zest only
  • dash of salt
  • 1 pint fresh blueberries
  • 1 flat fresh strawberries
  • 1/2 pint fresh raspberries
