How to Make Fudgy Turtle Brownies
- Preheat & Prepare: Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
- Mix the Batter: Start by melting your butter in the microwave on High for 1 minute. Pour the butter into a large mixing bowl and add the sugar. Using an electric mixer, beat the sugar and butter together for 1 minute. Add in your cocoa, espresso powder, eggs and vanilla and mix well for 1 minute.
- Dry Ingredients: Add in your flour, baking powder and salt and beat until just mixed. Fold in half of the pecans and half of the chocolate chips.

Caramel Sauce: In a small saucepan add unwrapped caramel candies and evaporated milk over medium heat. Gently stir together until completely melted. Remove from stove and set aside.

Layer & Swirl: Scoop half of the batter into your baking pan (batter will be super thick) and even out batter with the back of a spoon. Drizzle caramel sauce, sprinkle half of your remaining pecans and half of your remaining chocolate chips.

Top Brownie Layer: Grab off chunks of the remaining brownie batter and place them on top of the caramel layer to make a complete top layer.

It doesn’t need to be perfect, just full and even. Top with remaining pecans… not the chocolate chips though.. hold on to those!

Bake & Cool: Bake for 30 minutes. Remove from oven and sprinkle with remaining chocolate chips. Let cool completely on a cooling rack before removing them from the pan and slicing. Your turtle brownies can then be moved to an airtight container and stored on your counter top.

- Don’t Overbake – Brownies continue to set after being removed from the oven.
- Dividing Batter – When the batter is still in the bowl, I even it out as best as I can and then simply run the edge of my spatula right down the middle to make sure my brownie layers will be even.
- Caramel – I prefer to use the wrapped caramel candies vs. the caramel nubs. The candy is a little more labor intensive (so many cellophane wrappers!) but i think it has a better flavor.

These turtle brownies do not care about being figure friendly, they do not care about bathing suit season, they are completely unapologetic in their ooey gooey caramel center and extra chocolate chips. They do not care… but they shouldn’t have to because they are THE BEST guilty pleasure you will ever serve up on a plate!! Lol
