Cook the chicken for about 6-7 minutes per side until golden brown and cooked through (165°F/75°C). Once done, remove from the pan, let it rest for 5 minutes, and then slice it in approximately 1/2 inch slices.

Chop the Fresh Veggies:
Dice the red onion, thin dice fresh basil and dice the garlic. Set aside.
Cook the Bacon:
In a separate pan, cook the bacon over medium heat until crispy, about 4-5 minutes. Remove the bacon from the pan and crumble it into small pieces. Set aside.
Toast the Pine Nuts: In the same skillet you used for the chicken, add the pine nuts over medium heat. Toast them for about 2-3 minutes, stirring frequently, until golden and fragrant. Be careful not to burn them. Remove from pan and set aside.
