S’mores Pie

Marshmallows… not a fan.  But I am a fan of my husband (most days!) and my husband is a fan of marshmallows so guess what he wanted for dessert this past weekend .. S’mores!

Well, here in Florida this time of year we get thunderstorms every day so our weekend grilling festivities had to be moved inside so what better time to make a S’mores Pie?

I might not have a campfire or a grill but I do have a broiler and a butane torch and that’s just as good.

After much research…. and I mean, like way tooooooo much research …. I was shocked to find there are so many different ways to make a S’mores Pie.

You can make a gelatin marshmallow topping, you can use plain old regular marshmallows, you can use the baby marshmallows.

You can make a chocolate filling with eggs, without eggs, with condensed milk, with evaporated milk, with three kinds of chocolate, one kind of chocolate or no chocolate using cocoa powder instead.

Way. Too. Many. Options. Literally the only thing in common with all of these variations of S’mores Pie was that they all had a graham cracker crumb crust.

So that is where I decided to start when writing this recipe, MY recipe for S’mores Pie.  Honestly, it really shouldn’t be that complicated.

S’mores are a favorite childhood treat and the simplicity of heaven being delivered to your face in only three ingredients is part of why it is everyone’s go-to summertime treat.

I guess what I am saying is that you can make S’mores Pie as fancy and complicated or as simple and easy as you want.  I choose easy and delicious!

WHY THIS IS THE BEST S’MORES PIE

  • This pie has all of your favorite classic S’mores flavors but in pie form.
  • Perfect no mess way to enjoy S’mores… no melted chocolate and gooey marshmallow everywhere.
  • You get to play with fire. In your house.
  • Great easy dessert to bring to summer bbqs and pool parties.

For this S’mores Pie recipe, you will need:

  • Marshmallows – large or small, whatever your heart desires just as long as they marshmallows because it’s just not a S’mores Pie without them.
  • Bittersweet chocolate chips – I used Ghirardelli bittersweet chocolate chips for my S’mores chocolate pie filling. The marshmallows are sweet and you don’t want your chocolate pie filling to be super sweet or it will just be too much.
  • Espresso powder or brewed coffee – this ingredient is optional but suggested.  You don’t need much but adding the coffee flavor to the chocolate pie filling really brings out the dark flavors.
  • Heavy cream – this S’mores Pie filling is very easy with no complicated ingredients or methods.  Hot heavy cream + chocolate chips = chocolate pie.
  • Egg – you need just one egg to add into your chocolate pie filing.
  • Graham Cracker Crumbs – to makes this S’mores Pie crust, you can either crush up actual graham crackers or use a box of graham cracker crumbs.  
  • Butter, sugar and salt – you can’t make a delicious graham cracker crumb crust if you don’t have everything that holds it all together 🙂

HOW DO YOU MAKE S’MORES PIE?

Easy! To make this S’mores Pie, preheat your oven to 350 degrees and start with the graham cracker crumb crust.

Lightly butter a 9 inch pie pan.  In a large mixing bowl, combine graham cracker crumbs, melted butter, sugar and salt.

Stir well until mixed and then press crumbs evenly into the bottom and up the sides of your pie pan and set aside. Next, add your heavy cream to a small saucepan and bring to a low boil.

Add the chocolate chips, espresso powder or brewed coffee and a pinch of salt to a bowl and then pour the heated heavy cream over your chips.

Let sit for 1 minute before whisking to combine and melt chocolate.  Once your chocolate is melted, whisk in the egg and then pour chocolate filling into your prepared pie pan.

The pie filling will only come up about half way up the pie crust.

To make sure your graham cracker crumb crust does not melt, cover the edge with tin foil before baking.

Bake for 30-35 or until the chocolate pie is soft set and only jiggles slightly when shaken. Once baked, remove from oven and let cool.

When ready to serve, place the marshmallows on your pie and heat your oven broiler.

Set your oven on Broil, prop the oven door open a bit, move your oven rack to the second highest level and move your pie right under the broiler for 20-30 seconds or until your marshmallows are dark and toasty. 

Remove from the oven and using a kitchen towel, lightly press down on your marshmallows to push them together, making a solid marshmallow layer. Serve immediately.

HOW TO YOU TOAST THE TOP OF THE S’MORES PIE?

If you are a marshmallow lover, the best part of s’mores is the toasted marshmallow. So how to you toast the marshmallows on a S’mores Pie?

There are two ways you can toast the marshmallow topping on your S’mores Pie.  The first method is to use the broiler in your oven. 

By setting your oven on Broil, propping the oven door open a bit, moving your oven rack to the second highest level and moving your pie right under the broiler for 20-30 seconds, you will be rewarded with melty, ooey gooey marshmallows with a toasted top.

The second method is to enlist the help of a small butane torch and lightly brown and char your marshmallows. 

To be honest, I used both for my S’mores Pie.  I started with the torch but it didn’t actually melt the marshmallows, just set them on fire a bit. 

I recommend using the broiler method and adding the torching for extra color to your marshmallow.

PRO TIPS FOR MAKING S’MORES PIE

  • Your broiler will brown your marshmallows very quickly and will catch them on fire if you are not watching them.  Don’t walk away from your oven once you put your S’mores Pie under the broiler.
  • To serve your S’mores Pie, spray your knife or pie cutter with non-stick spray before slicing your pie. The marshmallows will not stick to your slicer.
  • Leftovers can be stored in the refrigerator, be sure to spray your foil or plastic wrap with non-stick spray before covering your pie for storage.
  • Depending on if you are a marshmallow lover, this next tip is either good or bad.. you are using full real marshmallows, not melting marshmallows down into a gelatin liquid substance so when you toast your marshmallows and they get all melty and come together, they form into almost like a little marshmallow blanket.  That means they are a solid layer of their own and they do not melt into the chocolate pie. So if you are not a marshmallow lover, you can simply move the marshmallow blanket over and give it to your friend who is and they will love you for the extra sweetness you have added to their pie and you do not have to fight through the marshmallow layer. This tip I give to anyone else like me that likes chocolate pie but not those ooey gooey marshmallows.
  • You can make your S’mores Pie graham cracker crumb crust toasted or not toasted. I have done both and I honestly did not see any difference with adding the step of toasting the crust. If you would like to toast your graham cracker crumb crust, simply make your pie crust then move it to a 350 degree oven for about 10 minutes.  Remove from the oven and let cool completely before constructing your pie.

Ingredients

Graham Cracker Crumb Crust

  • 12 graham cracker sheets, crushed ... or 2-1/4 cups of graham cracker crumbs
  • 7 tablespoons butter, melted
  • 3 tablespoons sugar
  • 1/8 teaspoon salt

Chocolate Pie Filling

  • 10 ounces bittersweet chocolate chips

  • 28 large marshmallows
