Baked Mahi Mahi with Citrus Glaze – Pack Momma

Health food. Just those words together can cause a shudder down your spine if you are a food lover like myself. Uncontrollable images of granola, Greek yogurt and tofu flash through my brain like a bad movie.  But these days, it’s necessary to try to repair some of the damage done by too many late night drive thru trips and being on a first name basis with our pizza delivery guy (Hey Ben!).  If you are used to eating everything unhealthy, making the change to a better living can seem daunting… and very frustrating.

I mean, how many times can you really eat chicken in one week?

If you are like me, it’s a daily struggle to think of nutritious meals that the entire family will eat. Picky eaters aside, it’s not easy to plan weekly meals ahead of time that will be on the healthier side and still satisfy everyone’s mood that day.  Seafood has always been a bad word in my house (the whole story is explained on my Diablo Bang Bang Shrimp Wrap recipe) but as of late, Big Scary Mike has had quite the open mind when it comes to trying new seafood recipes.  He’s not a hardcore convert but he will at least give most things a try and that’s all I’ve ever wanted. That being said, between you and me, I’m still not trying to turn him on to crab and lobster… those are mine.  Haha!

Mike is not a huge fan of some of the milder fish i have put in front of him so I thought maybe Mahi Mahi would be the next logical choice to try out on him.  It is such a perfect fish, not too mild and not too fall apart tender.  But for him to even consider it, i knew there would need to be an extra something to it.  Then came the sauce!!  Sweet and refreshing, spicy and amazing.

Did he like it, you ask?  Let’s just say there were no leftovers that night and he even suggested the sauce would be great on …. chicken…..  (sigh)…..

Baby steps….

 

Anyways, this is my new favorite way to prepare fish.  There is butter involved in this dish but overall it is healthier and nutritious and glaze is fresh and bright and really makes a huge impact.  Give this a try and I bet your family won’t be turning their nose up a fish night anymore.  Pair it with my Pineapple Mango Salsa like I did and I promise you won’t have any left overs either.

Ingredients

  • Citrus Glaze
  • 4 tbl butter , divided
  • 2 tbl olive oil
  • 1/8 red onion , sliced very thin and diced fine
  • 1/2 orange , zest and juice + extra zest for garnish
  • 1/2 lemon , zest and juice
  • 1/2 tsp garlic powder
  • 1 tsp cornstarch
  • Ground red pepper powder to taste
  • Salt and pepper to taste
  • 4 4 oz Mahi Mahi fillets
  • Non stick spray
  • 2 tbl olive oil
  • Parsley for garnish

Instructions

  • Preheat your oven to 400 degrees.
  • In a small saucepan, add 2 tablespoons of butter and when melted, add in the diced red onion. Cook for 1 minute and then add in the rest of your butter and olive oil and then cook for another 2 minutes, letting the butter brown slightly.
  • Add in the garlic powder, salt and pepper and the juice and zest of both the lemon and the orange. If you do not want your glaze to be spicy, do not add in the ground red pepper powder but if you do, add that in at this time as well.
  • Whisk everything together and bring to a low boil.
  • Spoon out 2 or 3 tablespoons of the sauce into a small bowl and add in your cornstarch.
  • Whisk to create a slurry and the and to the saucepan, stirring rapidly.
  • Reduce the heat and let it simmer.
  • Next, spray a cooking sheet with nonstick spray and lightly rub your fish fillets with olive oil and season with salt and pepper.
  • Place on your cooking sheet and cook for 20 minutes if fresh or 25 minutes if frozen. Your fish should be flaky and opaque.
  • Remove from the oven and drizzle with the citrus glaze.
  • Garnish with some left over orange zest and chopped parsley.

    Just made this tonight!! Mmmmmm!! Love the recipe and it’s perfect with mahi mahi. I added some honey and fresh basil. Made this with bacon wrapped asparagus. I know I know, defeats the purpose of a healthy meal but it was oh so good! Thanks for sharing this recipe!

      I’m so glad you liked it!! I love the idea of honey and basil .. anything to use fresh herbs is always a good idea. And I truly believe that asparagus wrapped in bacon cancels each other out so technically, still a healthy meal 🙂
