So I am a bit of a lemon addict. Don’t judge. I wasn’t always but at some point in the last few years, I have become a huge lover of all things lemon and that’s why if you search lemon on this website, you will find a ton of lemon recipes! My favorite lemon recipe to date?  These Lemon Crinkle Cookies!! Seriously, there is no easier way to make simple lemon cookies. This lemon crinkle cookie recipe is made using just butter, eggs, extract, lemon cake mix and some powdered sugar. That’s it!!!!! Let me explain…

Crinkle cookies are soft and melt in your mouth and when you add in the fact they are also cake mix cookies? Win .. win.. win!!

So what is a lemon crinkle cookie?

A lemon crinkle cookie is a lemon cookie that is soft on the inside, slightly crisp on the outside and looks ‘cracked’ since rolled in powdered sugar.

The best part about these lemon crinkle cookies is that this lemon cookie recipe is a double whammy because it’s also a lemon cake mix cookie recipe!!!

If you aren’t familiar with cake mix cookies, they are just as their name implies … cookies made using a store bought cake mix as their foundation.

As much as I love to make from scratch cookies, cake mix cookies are a favorite of mine. 

They are easy to make, ready to bake in just a few minutes and they always come out melt in mouth good and the perfect soft bake cookie.

So making lemon cake mix cookies was really a no brainer!

Only 5 Ingredients

  • Lemon box cake mix – this is the foundation of your lemon crinkle cookies
  • Eggs – for moisture and stabilization
  • Butter – FLAVOR
  • Powdered sugar – your crinkle cookies can crack but they aren’t crinkles without the powdered sugar on top
  • Lemon extract – MORE LEMON FLAVOR

how do you make lemon cake mix cookies?

  • Start by preheating your oven to 375 degrees and spray your cookie sheet with non-stick spray or cover with a sheet of parchment paper.
  • In a large mixing bowl, combine melted butter with the cake mix, lemon extract and eggs.

  • When you have your ingredients combined, refrigerate dough for at least 30 minutes.
  • Once chilled, remove from refrigerator and spooning up enough dough to roll into a 1 inch ball.
  • Drop the ball into the powdered sugar and roll it around to cover it completely.

  • Move your cookie to your prepared cookie sheet and repeat until all the dough has been used.
  • When your sheet is full, cook them for 9-11 minutes. They will be puffy and crinkly and beautiful.

  • Remove them from the oven, let them cool for one minute and then move them to a cooling rack.

pro tips for perfect lemon crinkle cookies

  • Don’t skip chilling the dough in the refrigerator. It brings the cookie dough together and your lemon cookies will be fluffier and hold their shape better if you chill the dough first.
  • Feel free to add in a few drops of yellow food coloring to brighten up your lemon cake mix cookies.
  • Using a small kitchen scoop is a great way to ensure your lemon crinkles cookies are all the same size.
  • If you want to kick up the dessert table presentation, re-drop your cookies top down in the powdered sugar one extra time right when they come out of the oven.

Storage and Leftovers

  • Cake mix cookies will keep in an airtight container at room temperature for 4-5 days.
  • Want to make your cookies last? Let your cake mix cookies cool completely before moving them to a small baking pan, one that will fit inside your freezer. Flash freeze your lemon cookies for about 30 minutes before moving them to a large zip-lock bag. Freeze your cookies up to two months. To thaw, let your lemon cookies sit at room temperature for about 2 hours before enjoying them.
