Whether I am doing a casserole like Tuscan Chicken Pasta , Perfect Chicken Parmesan or Easy Chicken Tortilla Soup, one way or another yard bird is being served up when it comes to dinner most nights of the week. All that being said, who doesn’t sometimes get bored of eating chicken? How much chicken can you eat before you just don’t want to chicken anymore? So, my husband teases me about my projects. I like projects. I may not like to finish them but I certainly love the excitement of starting them. The most recent project added to the list is a vegetable garden in our backyard. Now this is the part where I tell you that we live in the hottest area of the universe in summertime so there have been things that have literally incinerated within 10 minutes of being planted … but one thing that I seem to be doing very well with are peppers. Currently still alive under my supervision are jalapeno peppers, habanero peppers and even Tabasco peppers.
PS… I don’t like peppers.
Well, I shouldn’t say that. I do not like green peppers, red peppers, yellow peppers but the spicy varieties I can handle in moderation. Now one thing that I have learned is that when you grow your own jalapeno peppers at home there is the possibility that they will grow with a heat index of hotter than the sun. Wow! The peppers that I buy from my grocery store have nothing on these little peppers growing next to the deck in our backyard. Talk about hot and spicy and absolutely delicious!
So I needed to use up these Atomic jalapeno peppers and my first inclination was to write this recipe for Cheesy Jalapeno Popper Stuffed Chicken and can I tell you that this was the best idea I’ve ever had when it comes to spicing up plain ol’ boring chicken night. If you are a chicken lover and like to walk on the wild side with a little bit of spice, this recipe for Cheesy Jalapeno Popper Stuffed Chicken is perfect for you.
HOW DO YOU STUFF A CHICKEN BREAST?
Stuffing a chicken breast is easy. Rinse and clean your chicken breasts. Using a sharp knife, slice horizontally through the middle of the chicken breast, cutting to but not through the other side.
Fold the chicken breast open and spread a generous ounce of filling on the crease of the butterflied chicken breast. Fold the breast over until both sides meet again and toothpick the breast together to hold in the stuffing ingredients.
HOW DO YOU SECURE A STUFFED CHICKEN BREAST?
Do yourself a favor and find yourself some of these 4 inch skewers. They work so much better than toothpicks!!! Simply use the skewer and thread it through where the folded over sides meet, bringing both sides together to secure the filling.
HOW DO YOU MAKE CHEESY JALAPENO POPPER STUFFED CHICKEN?
Easy! To make your Cheesy Jalapeno Popper Stuffed Chicken , start by preheating oven to 375 degrees. Line a baking sheet with parchment paper or spray a baking pan with non-stick spray and set aside. Rinse and clean your chicken breasts. Using a sharp knife, slice horizontally through the middle of the chicken breast, cutting to but not through the other side. Fold the chicken breast open and spread a generous ounce of goat cheese on the crease of the butterflied chicken breast, spreading out. Season the breast generously with salt, onion powder and garlic powder
Sprinkle on diced bacon, jalapeno and shredded cheese, saving some of each for garnishing. Fold the Cheesy Jalapeno Popper Stuffed Chicken breast over until both sides meet again and toothpick (or skewer!) the breast together to hold in the stuffing ingredients. Repeat with all three chicken breasts and then move chicken to baking pan. Sprinkle top of chicken breasts with remaining shredded cheese and cook for 30 minutes. Remove Cheesy Jalapeno Popper Stuffed Chicken from oven, sprinkle remaining bacon and jalapeno and cook for another 2 minutes. Remove from oven and let set for 5-10 minutes. Serve Cheesy Jalapeno Popper Stuffed Chicken immediately.
