Cheesy Feta Bacon Skillet Potatoes
These homemade skillet potatoes are easy to make and the ultimate comfort food when it comes to potato side dishes. Perfect as a main course or as a comforting side dish to serve with steaks or sandwiches, this combination of crispy bacon, creamy feta cheese and skillet fried red potatoes will have you fighting for seconds!
Cheesy Feta Bacon Skillet Potatoes
Whatโs your favorite side dish from when you first started cooking? Hands down mine is this red potato creation of Cheesy Feta Bacon Skillet Potatoes. It also doesn’t hurt it’s chances as being my favorite seeing as how this was the ONLY thing I knew how to cook back then. Nothing like hedging those bets, huh? What’s not to love about crispy bacon pieces, skillet fried red potatoes and cream tangy chunks of feta cheese? Top it all off with slivers of green onions and you have the perfect bowl of comfort food. Trust me!

- Easy – When it comes to easy side dishes, these skillet red potatoes wins hands down. Simply cut your potatoes, fry them up and add in your bacon, onions and feta. Done!

CHEESY BACON POTATO INGREDIENTS
- Olive oil – Perfect cooking oil for light frying potatoes.
- Red potatoes – My favorite small potatoes for this dish since they aren’t as starchy as Russets but still hold their shape and taste amazing.
- Spices – Flavor.
- Bacon pieces – It’s bacon.. no more explanation is needed! Lol.. seriously, whether you fry up bacon in oven for this recipe or grab a bag of pre-cooked bacon from the salad dressing aisle at the grocery store, there are no wrong choices here.
- Feta cheese – Cheddar cheese has it’s place in the world (ahem.. mac n cheese, please!) but for this version of cheesy fried potatoes, feta is my choice. Creamy, tangy and the perfect semi-soft white cheese to pair with bacon, onions and crispy potatoes.
- Green onion – Scallions bring the perfect spicy bite to these cheesy skillet potatoes.
SUBSTITUTIONS
- Potatoes – Russet potatoes, Yukon golds, sweet potatoes.. even mashed cauliflower can be subbed in for the red potatoes.
- Meat – Crumbled sausage, kielbasa, cut up steak, ground beef or leave the meat out entirely for a meatless side dish.
- Cheese – Cheddar, parmesan, goat cheese or even Swiss.
HOW TO MAKE CHEESY SKILLET POTATOES
- Start by washing and cutting the red potatoes into bite sized pieces. Add olive oil to a large skillet and heat over medium-high heat.
- Add potato wedges and stir to coat. Cover skillet and cook covered for approximately 20 minutes, shaking skillet often redistribute potatoes in the pan.
- After 20 minutes, remove the lid and reduce heat to medium.
- Stir in pre-cooked bacon pieces, spices, salt and diced green onions. Continue to cook for another 5 minutes, stirring often. Potatoes should be fork tender.
- Remove from heat and let cool for a minute or two. Add in crumbled feta cheese and stir to combine.
EXPERT TIPS AND TRICKS
- Seasoning – Season your potatoes! Potatoes in general are very bland so don’t be afraid to season them liberally. Taste your fried potatoes before serving and season as needed.
- Crisp ’em up – Don’t stir your potatoes too much, you want them to sizzle and sear for them to get crispy and golden brown.
- Bacon – If cooking bacon for this skillet recipe instead of grabbing pre-cooked bacon, feel free to add a bit of bacon grease to your skillet for added flavor.
- Feta – I have learned the hard way to let your crispy bacon potatoes to cool for a few minutes before stirring in the feta cheese. Feta is somewhat delicate when it comes to cheeses and will melt quickly if added when the potatoes are screaming hot. I like the chunks of feta to stay chunks and not completely melt.
- Bacon pieces – I use the pre-cooked bacon piece packets found in the salad dressing aisle of my supermarket. They take the work and mess out of adding bacon to a recipe. However, feel free to use 6 slices of cooked bacon if you would like ๐
ARE RED POTATOES GOOD FOR FRYING?
Red potatoes have less starch and more sugars than russet potatoes so they stay more firm when cooking. They are perfect for boiling, pan frying, grilling, scalloping, and steaming.
ARE RED POTATOES HEALTHY?
Like many skinned vegetables, much of the nutritional value of a potato is found in its skin. Red potatoes are particularly healthy because of the there red skins are loaded with fiber, B vitamins, iron and potassium. Half of the fiber of a potato comes from the skin. So yes, red potatoes are a healthy alternative.
STORING LEFTOVERS and REHEATING
Store leftover potatoes in an airtight bag in the refrigerator for up to four days. To reheat, simply add a bit of olive oil to a skillet and heat over medium-high heat. Add your potatoes and heat until warmed through, usually 3-4 minutes. You can also reheat your skillet potatoes in the microwave for 1-2 minutes or until hot.

Ingredients
