What’s your favorite dish from when you first started cooking?  Hands down mine is this red potato creation of Skillet Red Potatoes with Bacon and Feta. It also doesn’t hurt it’s chances as being my favorite seeing as how this was the ONLY thing I knew how to cook back then. Nothing like hedging those bets, huh?

Seriously, these Skillet Red Potatoes with Bacon and Feta are easy and comforting all day long.  Many, many (….. MANY…..) moons ago when I was in my early 20’s and living on my own, this dish was a lifesaver.  I was never home and I was always broke (*shout out to the girls who live on their own with no roommates, pay their own bills with no help from anyone, have a good job and manage to survive on a $25.oo a week grocery bill #ramen).  Ahhh … good times.  This was long before my husband was even in the picture, back when I stayed out all night and never knew what the day would bring and random impulsiveness was the word of the day.  Now it’s all about husband and dogs and mortgages and planning ahead and RESPONSIBILITY!!!

ARE RED POTATOES GOOD FOR FRYING?

Red potatoes have less starch and more sugars than russet potatoes so they stay more firm when cooking. They are perfect for boiling, pan frying, grilling, scalloping, and steaming.

ARE RED POTATOES HEALTHY FOR YOU?

Like many skinned vegetables, much of the nutritional value of a potato is found in its skin. Red potatoes are particularly healthy because of the there red skins are loaded with fiber, B vitamins, iron and potassium. Half of the fiber of a potato comes from the skin. So yes, red potatoes are a healthy alternative.

HOW DO YOU MAKE SKILLET RED POTATOES WITH BACON AND FETA?

Easy! To make your Skillet Red Potatoes with Bacon and Feta, start by washing and cutting the red potatoes into bite sized pieces.  Add olive oil to a large skillet and heat over medium-high heat.
Add potato wedges and stir to coat. Cover skillet and cook covered for approximately 20 minutes, shaking skillet often redistribute potatoes in the pan.  After 20 minutes, remove the lid and reduce heat to medium.  Stir in pre-cooked bacon pieces, spices, salt and diced green onions.  Continue to cook for another 5 minutes, stirring often.  Potatoes should be fork tender. Add in crumbled feta cheese and stir to combine.  Remove from heat and serve immediately.

I would make a big pot of this Sunday nights and nosh on it though out the week as I flew in long enough to heat up a bowl and to change clothes for my next adventure then out the door I went.  This Skillet Red Potatoes with Bacon and Feta dish is easy.. it is affordable… IT IS DELICIOUS!! 

Maybe we are past the time of late night parties and lost weekends but delicious meals are timeless and this Skillet Red Potatoes with Bacon and Feta recipe is certainly one of them.  Eat this as a main course (mmm… add in some grilled chicken or summer sausage) or serve it up as a hearty side, either way you have a winner.

And if for some reason you have ANY leftovers… trust me… it reheats well.

Ingredients

  • 2-3 tablespoons olive oil
  • 3 lbs red potatoes cut into bite sized pieces
  • 5 ounce pre-cooked bacon pieces
  • 6 green onions diced
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 4 oz feta cheese crumbled

Instructions

  • Start by washing and cutting the red potatoes into bite sized pieces.  Add olive oil to a large skillet and heat over medium-high heat.  
  • Add potato wedges and stir to coat. Cover skillet and cook covered for approximately 20 minutes, shaking skillet often redistribute potatoes in the pan. After 20 minutes, remove the lid and reduce heat to medium. 
  • Stir in pre-cooked bacon pieces, spices, salt and diced green onions. Continue to cook for another 5 minutes, stirring often. Potatoes should be fork tender. Add in crumbled feta cheese and stir to combine. Remove from heat and serve immediately.

Notes

I use either the Oscar Mayer or Hormel pre-cooked bacon piece packets found in the salad dressing aisle of my supermarket.  They take the work and mess out of adding bacon to a recipe.  However, feel free to use 6 slices of cooked bacon if you would like 🙂

    I’ve yet met a potato that I didn’t want to gobble down!! Adding bacon and feta gives the potatoes a special touch. This would be a perfect side for a picnic or a weeknight dinner.

    I didn’t realized red potatoes were better for frying! I kind of just assumed they all were because I love frying potatoes haha. I love the combinations of the flavours of feta and bacon with the potatoes here – it’ll definitely be a hit at the dinner table.

    Hi Heather,
    yep salads are always life savers when you are living by yourself and on budget. Trust me this salad is way gourmet than the ones I used to make when I needed a break from cereal and milk 😉
